Claims (3)
- 찰 옥수수 5∼6중량부를 가루 내어 시루에 쩌서 찰 옥수수 떡을 만든 후 끊여서 식힌 소금물과 혼합한 후 소금물과 혼합한 찰 옥수수 떡에 황태가루 25∼30중량부를 혼합하고, 찰 옥수수 떡과 혼합한 황태가루를 찰 옥수수 조청 25∼30중량부와 혼합하여 48시간 숙성시킨 후 황태가루를 고춧가루 28∼35중량부와 메주 5∼8중량부와 혼합하여 제조한 황태 고추장의 제조 방법
- 제 1 항에 있어서,황태가루는,황태를 먼저 껍질이나 뼈 등의 불가식 부위를 제거한 후 주정을 넣은 밀폐용기에 황태를 넣은 후 24시간 동안 담가둔다. 24시간 후 황태를 꺼내 영하 30℃ 이하 에서 동결 건조시킨다. 동결 건조 시킨 황태를 분쇄기를 이용하여 미세한 가루로 분쇄하여 황태가루를 얻는다이때 얻어진 황태가루를 100℃의 온도에서 약 2분 동안 볶아 주므로 황태 특유의 강한 냄새를 없애주는 동시에 황태의 고소한 풍미를 유지시켜 주는 최적의 황태가루를 주원료로 얻는 제조방법
- 청구항 1 또는 청구항 2의 방법으로 제조되는 것을 특징으로 하는 황태 고추장
