Claims (5)
2) 상기 전처리된 사과 과육을 지름 1~10 mm의 크기로 분쇄하는 조분쇄 단계;
3) 상기 조분쇄된 사과 과육과 사과 과피에 설탕을 첨가 및 혼합하여 상기 과육으로부터 펙틴 성분이 외부로 빠져나오도록 하는 당침 단계;
4) 상기 당침된 사과 과육과 과피를 상기 설탕 혼합과 함께 가열함으로써 삼투압 작용으로 상기 사과 과피로부터 안토시아닌 추출물이 생성된 혼합액이 되도록 조림하는 단계;
5) 상기 혼합액에 버터 및 라임즙을 혼합하고 열을 가해 마쇄하는 단계;
이때, 상기 버터 및 라임즙 이외에 스프레드 100중량부당, 오가피나무를 80 ~ 120℃의 온도에서 10시간 이상 동안 추출 여과하고 이를 5 ~ 7%인 고형분으로 농축한 오가피 추출액 1~5중량부를 추가적으로 포함하는 것을 특징으로 하고, 및
6) 상기 마쇄된 혼합액의 냉장보관을 통한 후기 숙성 및 점도 고착 단계;를 포함하는 사과, 버터 및 안토시아닌 추출물을 이용한 스프레드의 제조 방법.
