(a) 건조 재료와 습윤 재료를 준비하는 단계;

(d) 상기 열처리된 건조 재료와 효소 처리된 습윤 재료를 결합하는 단계;
(e) 상기 결합된 재료를 발효 및 숙성시키는 단계;
(f) 숙성된 시즈닝을 건조 및 성형하는 단계;
를 포함하되,
상기 (a) 단계에서 준비되는 재료의 조성은,
고춧가루 20.0-25.0 중량부, 흑설탕 10.0-15.0 중량부, 마늘 분말 2.0-3.0 중량부, 양파 분말2.0-3.0 중량부, 생강 분말 1.0-2.0 중량부, 훈제 파프리카 분말 1.0-2.0 중량부, 후추 0.5-1.0 중량부 및 큐민 0.3-0.6 중량부를 포함하는 건조 재료;
토마토 케첩 15.0-20.0 중량부, 양조간장 10.0-15.0 중량부, 물엿 5.0-7.0 중량부, 사과 퓨레 4.0-6.0 중량부 및 파인애플 주스 3.0-5.0 중량부를 포함하는 습윤 재료;
그리고 프락토올리고당 1.0-2.0 중량부, 이눌린 0.5-1.0 중량부 및 효소 복합체 0.1-0.5 중량부를 포함하는 기타 첨가물;

상기 (b) 단계는,
(b1) 건조 재료를 200 메시 이하로 미분쇄하는 단계;
(b2) 미분쇄된 건조 재료를 110-130℃에서 7-12분간 볶아 향을 활성화시키는 단계;
(b3) 볶은 건조 재료를 40℃ 이하로 급속 냉각하는 단계;

(c1) 습윤 재료를 65-75℃로 가열하여 혼합하는 단계;
(c2) 혼합된 습윤 재료에 전체 조성물 100 중량부 당0.1-0.5 중량부의 프로테아제와 아밀라아제 효소 복합체를 첨가하는 단계;
(c3) 효소 첨가된 혼합물을 40-45℃에서 4-8시간 동안 효소 반응시키는 단계;

A wet material comprising 15.0-20.0 parts by weight of tomato ketchup, 10.0-15.0 parts by weight of soy sauce, 5.0-7.0 parts by weight of corn syrup, 4.0-6.0 parts by weight of apple puree and 3.0-5.0 parts by weight of pineapple juice;
And other additives including 1.0-2.0 parts by weight of fructooligosaccharide, 0.5-1.0 parts by weight of inulin and 0.1-0.5 parts by weight of enzyme complex;
Including,
Step (b) above,
(b1) a step of pulverizing the dry material to 200 mesh or less;
(b2) a step of roasting the unpulverized dry material at 110-130℃ for 7-12 minutes to activate the fragrance;
(b3) a step of rapidly cooling the roasted dried material to 40℃ or lower;

Step (c) above,
(c1) a step of heating and mixing the wet material to 65-75℃;
(c2) a step of adding 0.1-0.5 parts by weight of a protease and amylase enzyme complex per 100 parts by weight of the total composition to the mixed wet material;
(c3) a step of subjecting the enzyme-added mixture to an enzyme reaction at 40-45°C for 4-8 hours;
