Claims (8)
- 생닭의 꽁지 부분 및 날개끝도 제거하고, 지방이 많은 부분을 잘라내고, 내장과 피를 제거하고 내외부를 세척하여 닭을 손질하는 단계(S1);
손질된 닭을 염지하기 위한 염지제를 제조하는 단계(S2);
상기 염지제를 이용하여 손질된 닭을 염지하는 단계(S3);
상기 염지된 닭의 내부에 찹쌀혼합물을 넣는 단계(S4); 및
상기 닭을 전기히터에 의하여 구현되는 고온 환경에서 구워 전기통닭을 조리하는 단계(S6);를 포함하고,
상기 단계(S2)는,천일염, 코셔소금, 죽염, 후추 분말을 혼합한 베이스혼합물을 얻는 단계(S2-1)와, 양파, 마늘, 생강, 파파야, 무화과를 혼합한 제1염지혼합물을 얻는 단계(S2-2)와, 월계수잎, 마조람, 세이보리, 커피원두, 유칼립투스잎, 루꼴라, 물을 혼합한 제2염지혼합물을 얻는 단계(S2-3)와, 상기 베이스혼합물에 제1,2염지혼합물을 혼합한 후 동결 건조하고 분말화하여 염지제를 제조하는 단계(S2-4)를 포함하는 것을 특징으로 하는, 전기구이 통닭 제조방법. - 제1항에 있어서,
상기 닭의 외표면을 올리브유를 이용하여 코팅하는 단계(S5)를 더 포함하는 것을 특징으로 하는, 전기구이 통닭 제조방법. - 삭제
- 제1항에 있어서,
상기 단계(S2-1)는, 상기 천일염 100 중량부를 기준으로 상기 코셔소금 40~60 중량부와, 상기 죽염 40~60 중량부와, 상기 후추 분말 4~8 중량부의 비율로 혼합하여 상기 베이스혼합물을 얻는 단계인 것을 특징으로 하는, 전기구이 통닭 제조방법. - 제1항에 있어서,
상기 단계(S2-2)는, 상기 양파 100 중량부를 기준으로 상기 마늘 20~30 중량부와, 상기 생강 10~16 중량부와, 상기 파파야 20~30 중량부와, 상기 무화과 20~30 중량부의 비율로 혼합한 후 믹서로 갈아 제1염지혼합물을 단계인 것을 특징으로 하는, 전기구이 통닭 제조방법. - 제1항에 있어서,
상기 단계(S2-3)는, 상기 월계수잎 100 중량부를 기준으로 상기 마조람 140~200 중량부와, 상기 세이보리 80~120 중량부와, 상기 커피원두 10~16 중량부와, 상기 유칼립투스잎 100~200 중량부와, 상기 루꼴라 100~200 중량부와, 상기 물 100~200 중량부의 비율로 혼합한 후 믹서로 갈아 제2염지혼합물을 얻는 단계인 것을 특징으로 하는, 전기구이 통닭 제조방법. - 제1항에 있어서,
상기 단계(S2-4)는, 상기 베이스 혼합물 100 중량부를 기준으로, 상기 제1염지혼합물 20~40 중량부 및 상기 제2염지혼합물 60~100 중량부의 비율로 혼합하고, -45℃에서 12~18 시간동안 동결건조한 후 분말화 된 염지제를 얻는 단계인 것을 특징으로 하는, 전기구이 통닭 제조방법. - 청구항 제1항, 제2항, 제4항 내지 제7항중 어느 한 항에 의하여 제조되는 것을 특징으로 하는 전기구이 통닭.
