Claims (5)
- 유산균, 효모, 고초균 및 방선균으로 이루어지는 유용미생물 배양액을 제조하고, 쌀에 상기 제조된 유용미생물 배양액을 첨가하여 발효시킨 발효쌀을 분쇄기로 분쇄하여 발효쌀 천연분말을 제조하는 단계;
미리 절단된 양파, 당근, 샐러리, 마늘, 대파, 토마토를 포함하는 미르포아 야채를 준비하고, 절단된 닭고기가 들어 있는 가열용기에 조리물을 넣고 끓이면서 상부에 떠오르는 분순물을 제거하고, 상기 절단된 닭고기에 복숭아씨, 살구씨, 측백씨 중 하나 이상의 씨를 끓여서 식힌 씨앗물을 전체 조리물의 10~20중량부를 넣고 함께 끓이고, 상기 준비된 미르포아 야채와 마늘과 월계수잎, 통후추, 파슬리, 타임, 로즈마리, 다시마를 닭고기가 들어있는 가열용기의 내부에 넣고 끓이고 걸러낸 육수를 상온에서 식히고, 분무건조장치를 사용하여 열풍에 분무 미립화한 치킨스톡 분말을 제조하는 단계;
건조된 유자잎을 타지 않도록 덖고, 상기 덖은 유자잎을 분쇄기를 이용하여 분쇄하고, 분쇄한 유자잎 분말을 체에 걸러 유자 잎분말을 제조하는 단계;
모시조개, 바지락, 맛조개, 꼬막, 소라, 굴을 포함하는 패각류 껍질을 세척 및 자연 건조하고, 상기 건조된 패각류 껍질을 분쇄기를 이용하여 분쇄하여 패각류 껍질 분말을 제조하고, 상기 제조된 패각류 껍질 분말의 전체 중량에 단백질 분해 효소를 첨가시켜 가수분해물을 얻고, 상기 가수분해물에 에탄올을 첨가하여 교반한 다음 고분자 물질 및 불순물을 침전시켜 맑은 패각류 껍질 엑기스를 얻고, 상기 얻어진 패각류 껍질 엑기스를 분무건조장치를 사용하여 열풍에 분무 미립화한 패각류 껍질에서 추출한 패각류 껍질 분말을 제조하는 단계;
양념용 일반 고춧가루, 양념용 청양 고춧가루, 설탕, 맛소금, MSG계 조미료, 소고기맛 분말형 복합 조미료, 양파 분말, 마늘 분말, 순후추를 각각 준비하는 단계;
상기 준비된 양념용 일반 고춧가루, 양념용 청양 고춧가루, 설탕, 맛소금, MSG계 조미료, 소고기맛 분말형 복합 조미료, 양파 분말, 마늘 분말, 순후추에 상기 발효쌀 천연분말, 상기 치킨스톡 분말, 상기 유자잎 분말, 상기 패각류 껍질 분말을 교반기를 사용하여 균일하게 혼합되도록 교반하는 단계를 실시하여 제조되는 것을 특징으로 하는 조미 분말.
- 제1항에 있어서,
상기 가수분해물은,
80-100℃ 온도에서 15-30분간 가열하여 효소를 불활성화시킨 후 정밀여과법으로 규조토 여과로 잔사를 제거하는 것을 특징으로 하는 조미 분말.
- 제1항에 있어서,
짠맛을 내는 상기 맛소금 : 단맛을 내는 상기 설탕 : 신맛을 내는 상기 유자잎 분말 : 구수한 맛과 감칠맛을 내는 상기 치킨스톡의 비율은 4~5:30~35:1:5~7 중량비로 혼합되는 것을 특징으로 하는 조미 분말.
- 제1항에 있어서,
상기 단백질 분해효소는 패각류의 최적의 풍미 발현을 위해 최적 조건이 45℃, pH 8인 프로테아제(Protease)를 이용하는 것을 특징으로 하는 조미 분말.
- 제1항에 있어서,
상기 패각류 껍질 엑기스는,
99%의 에탄올을 전체 가수분해물 대비하여 30-60 중량부 첨가하여 교반한 다음 15시간 이상을 방치 및 고분자 물질 및 불순물을 침전시켜 얻는 것을 특징으로 하는 조미 분말.
