Abstract
본 발명에 따른 면류 음식용 반죽조성물의 제조방법은 수세척한 보리와 쌀을 준비하고 이를 100~200메쉬의 크기로 분쇄하여 된 곡물분말 준비단계; 뽕나무잎을 수세척하여 건조시킨 뒤 100~200메쉬의 크기로 분쇄하는 뽕잎분말 준비단계; 식용곤충을 수세척하여 건조시키고 이를 80~120℃의 온도에서 1~10초 가열처리하여 표피를 정리하는 표피정리과정 및 표피가 정리된 곤충을 50~200메쉬의 크기로 분쇄하는 분쇄과정을 통해 얻은 곤충분말 준비단계; 발아용 곡물을 발아시킨 것으로, 용수에 4~8시간 18~24℃의 온도에서 불리는 불림과정 및 불림된 곡물을 24~48시간 20~28℃의 온도에서 발아싹이 5mm 이하를 갖도록 발아시키는 발아과정 및 발아된 곡물을 100~200메쉬의 크기로 분쇄하여 된 발아분말 준비단계; 수세척 한 산채나물을 증숙하여 건조시키고 이를 20~200메쉬의 크기로 분쇄하여 산채나물분말 준비단계; 상기 곡물분말과 뽕잎분말과 유지성분을 함유한 곤충분말과 발아분말 그리고 산채나물분말을 용수와 혼합하여 반죽하는 반죽물을 만드는 반죽물 제조단계;로 구성된다.
이와 같이 구성되는 본 발명의 면류 음식용 반죽조성물의 제조방법은 분쇄된 쌀과 보리를 주재로 하여 이에 산채나물과 이에 활성영양소를 다량 함유한 발아곡물 그리고 단백질과 지방을 함유한 식용곤충을 혼합하여 반죽 조성물을 제조함으로써 식품으로서의 균형있는 영양과 맛을 제공할 수 있고, 아울러 풍미 면에서도 남녀 노소 누구나 부담스럽지 않으면서 간편하게 섭취 할 수 있는 식품으로서의 제공이 가능한 이점이 있다.

Claims (5)
- 수세척한 보리와 쌀을 준비하고 이를 100~200메쉬의 크기로 분쇄하여 된 곡물분말 준비단계;
뽕나무잎을 수세척하여 건조시킨 뒤 100~200메쉬의 크기로 분쇄하는 뽕잎분말 준비단계;
식용곤충을 수세척하여 건조시키고 이를 80~120℃의 온도에서 1~10초 가열처리하여 표피를 정리하는 표피정리과정 및 표피가 정리된 곤충을 50~200메쉬의 크기로 분쇄하는 분쇄과정을 통해 얻은 곤충분말 준비단계;
발아용 곡물을 발아시킨 것으로, 용수에 4~8시간 18~24℃의 온도에서 불리는 불림과정 및 불림된 곡물을 24~48시간 20~28℃의 온도에서 발아싹이 5mm 이하를 갖도록 발아시키는 발아과정 및 발아된 곡물을 100~200메쉬의 크기로 분쇄하여 된 발아분말 준비단계;

상기 곡물분말과 뽕잎분말과 유지성분을 함유한 곤충분말과 발아분말 그리고 산채나물분말을 용수와 혼합하여 반죽하는 반죽물을 만드는 반죽물 제조단계;로 구성되는 것을 특징으로 하는 면류 음식용 반죽조성물의 제조방법. - 제 1항에 있어서, 상기 발아곡물은 발아과정 후 건조기에서 16~48시간 건조되거나 또는 24~72시간 자연 건조되는 건조과정을 마친 후 분쇄되며;,
상기 산채나물분말 준비단계에서 상기 산채나물분말은 상기 곤충분말과 혼합되어 20~200메쉬의 크기로 재분쇄되는 과정을 더 포함하여 구성되는 것을 특징으로 하는 면류 음식용 반죽조성물의 제조방법. - 제 1항에 있어서, 상기 곤충분말 준비단계에서,
상기 식용곤충은 누에, 장수풍뎅이 유충, 밀웜, 전갈, 메뚜기, 번데기, 박각시 애벌레, 고소에, 백강잠, 굼벵이, 꽃뱅이, 누에번데기 중 어느 하나 또는 하나 이상이고;,
상기 분쇄된 곤충분말을 압착하여 유지를 분리하는 착유과정을 통해 곤충기름을 얻는 과정을 포함하고;,
상기 반죽물 제조단계에서 상기 착유된 곤충기름을 혼합하여 반죽하는 것을 특징으로 하는 면류 음식용 반죽조성물의 제조방법. - 제 1항에 있어서, 상기 발아용 곡물은 멥쌀, 현미· 현미찹쌀· 흑미· 보리· 밀· 수수· 조· 콩· 율무· 옥수수· 녹두· 참깨 중 어느 하나 또는 하나 이상을 포함하며,
상기 산채나물은 꾸지뽕나무잎·쇠비름·죽순·동충하초· 상황버섯· 차가버섯· 노루궁뎅이 버섯의 나물류, 엽채류, 버섯류 중 하나 이상을 끓는 물에 30초~3분 가량 데친 후 탈수 건조한 것이거나 또는 자연 건조시킨 것 중 어느 하나가 사용되는 것을 특징으로 하는 면류 음식용 반죽 조성물의 제조방법. - 제1항 내지 제4항 중 어느 한 항에 따른 방법에 따라 제조된 것을 특징으로 하는 면류 음식용 반죽 조성물.
