Abstract
본 발명에 따른 김치 핫도그의 제조방법은, 핫도그의 제조방법에 있어서, 난백과 정제수를 반죽기에 투입하여 믹싱하는 단계(S1); 상기 난백과 정제수를 믹싱한 반죽기에 김치 분말을 포함하는 핫도그 프리믹스를 투입하고, 정제수를 투입하여 믹싱하여 핫도그 반죽을 제조하는 단계(S2); 상기 핫도그 반죽을 숙성하는 단계(S3); 속재료에 막대형 꼬지를 끼우고 상기 속재료의 표면에 상기 핫도그 반죽을 도포하여 핫도그를 성형하는 단계(S4); 상기 성형한 핫도그를 유탕하는 단계(S5); 및 상기 유탕한 핫도그를 냉각하는 단계(S6);를 포함하는 것을 특징으로 한다.

Claims (5)
- 핫도그의 제조방법에 있어서,
난백과 정제수를 반죽기에 투입하여 믹싱하는 단계(S1);
상기 난백과 정제수를 믹싱한 반죽기에 김치 분말을 포함하는 핫도그 프리믹스를 투입하고, 정제수를 투입하여 믹싱하여 핫도그 반죽을 제조하는 단계(S2);
상기 핫도그 반죽을 숙성하는 단계(S3);
속재료에 막대형 꼬지를 끼우고 상기 속재료의 표면에 상기 핫도그 반죽을 도포하여 핫도그를 성형하는 단계(S4);
상기 성형한 핫도그를 유탕하는 단계(S5); 및
상기 유탕한 핫도그를 냉각하는 단계(S6);를 포함하며,
상기 S1 단계에서, 상기 난백 10~15 중량부와 상기 정제수 10~20 중량부를 투입하여 믹싱하며,
상기 S2 단계에서, 상기 핫도그 프리믹스 60~70 중량부와 상기 정제수 10~20 중량부를 투입하여 믹싱하며,
상기 S3 단계에서, 5~10℃의 저온에서 60~90분 동안 숙성하며,
상기 S4 단계에서, 상기 속재료는 소시지, 어묵, 가래떡 및 고구마로 이루어지는 군으로부터 선택된 어느 하나이고, 상기 속재료 100 중량부에 대하여 상기 핫도그 반죽 80~120 중량부를 도포하며,
상기 S5 단계에서, 상기 성형한 핫도그를 160~170℃에서 2~5분 동안 유탕하며,
상기 S6 단계에서, 상기 유탕한 핫도그를 상온에서 1차 냉각한 다음, -36℃ 이하에서 35~45분 동안 급속 냉각하며,
상기 핫도그 프리믹스는, 김치 분말 60~80 중량부, 타피오카 전분 15~25 중량부, 인산이전분 6~8 중량부 및 히드록시프로필인산이전분 2~4 중량부를 포함하는 것을 특징으로 하는 김치 핫도그의 제조방법.
- 제1항에 있어서,
상기 S1 단계와 S2 단계에서,
상기 정제수를 대체하여 시래기 농축액으로 핫도그 반죽을 제조하는 것을 특징으로 하는 김치 핫도그의 제조방법.
- 제2항에 있어서,
상기 시래기 농축액은, 시래기를 그 중량의 0.5~2.0배의 물 또는 쌀뜨물이 들어있는 추출기에 넣고 60~80℃의 온도에서 12~14시간 동안 농축 추출하는 것을 특징으로 하는 김치 핫도그의 제조방법.

청구항 1 내지 청구항 3 중 어느 한 항의 김치 핫도그의 제조방법에 의하여 제조되는 것을 특징으로 하는 김치 핫도그.
