본 발명에 의하면, 제빵 개량제를 사용하지 않고서도 조직감, 식감, 수분보유력, 탄성 등의 품질이 우수한 빵을 제조할 수 있는 장점이 있다. 아울러, 탕종의 사용으로 빵의 노화를 방지함으로써, 빵의 저장기간을 연장할 수 있는 장점이 있다.

Claims (5)
- 팥 앙금을 제조하는 단계와,
탕종(Tanzhong)을 제조하는 단계와,
밀가루, 발아 밀가루, 건조효모, 물을 혼합하고, 15~25℃에서 20~30시간 숙성시켜 스펀지를 제조하는 단계와,
밀가루, 올리고당, 죽염, 버터, 건조효모, 탕종 및 스펀지를 혼합하여 반죽하는 단계와,
상기 반죽을 이용하여 1차 발효하는 단계와,
상기 1차 발효된 반죽에 팥 앙금을 넣어 빵을 성형하는 단계와,
상기 성형된 빵을 2차 발효하는 단계와,
상기 2차 발효된 빵을 굽는 단계를 포함하고,
상기 탕종을 제조하는 단계는, 물을 가열한 후, 가열한 물에 밀가루를 1:1 중량비로 투입하고, 1~3분간 교반하여서 제조하는 것이고,
상기 스펀지를 제조하는 단계는, 밀가루 100중량부, 발아 밀가루 30~70중량부, 건조효모 0.3~0.7중량부, 생수 50~70중량부의 비율로 혼합하는 것이고,
상기 반죽 단계는, 밀가루 100중량부, 올리고당 5~12중량부, 죽염 2~6중량부, 버터 3~7중량부, 건조효모 1~3중량부, 탕종 30~40중량부 및 스펀지 120~160중량부를 혼합하여 반죽하는 것을 특징으로 하는 빵의 제조방법.

팥을 3회에 걸쳐 삶아주는 단계와,

상기 1차 발효는 22~30℃에서 1~17시간 동안 발효하고,
상기 2차 발효는 22~30℃에서 1~17시간 동안 발효하는 것을 특징으로 하는 빵의 제조방법.
- 제 1항 또는 제 4항 중 어느 한 항의 방법으로 제조되는 것을 특징으로 하는 빵.
