Abstract
익기 전의 인삼열매를 설탕과 1:1의 중량비로 혼합하여 일광이 차단된 발효용 옹기에 수장하여 20~25℃로 공기가 차단된 상태를 유지하되, 3개월 이상이 지난 후 인삼열매 당절임에 배(pear)발효액, 익힌 마늘, 무즙 중의 어느 하나를 전체 당절임의 2%중량비로 투여하여 유산균주의 생성을 활성화시킴을 특징으로 하는 인삼열매 발효액의 제조방법이다.
본 발명은 자연발효기간을 최대한으로 단축하면서도 향기롭고 식미감이 뛰어난 인삼열매 발효액을 생성할 수 있으며, 진세노사이드(ginsenoside)의 성분이 다량 함유된 인삼열매를 활용할 수 있어서 농가의 소득증대에 기여할 수 있다.

[0020] 인삼열매를 세척하여 충분히 건조하고 동등한 중량의 설탕과 함께 옹기에 수장하고 밀봉하였다. 온기는 발효 적정온도인 20~25℃가 유지되도록 하고 인삼열매 당절임에는 가급적 공기와 접촉하지 않도록 밀폐보조덮개를 사용하였다.

당절임 3개월 후 당절임에 설탕이 남아 있는지를 확인하여 설탕이 충분히 침적될 만큼 배 발효액을 투여한 다음 원상태와 같이 보존하였다.

- 익기 전의 인삼열매를 설탕과 1:1의 중량비로 혼합하여 일광이 차단된 발효용 옹기에 수장하여 20~25℃로 공기가 차단된 상태를 유지하되, 3개월 이상이 지난 후 인삼열매 당절임에 배(pear) 발효액을 전체 당절임의 2%중량비로 투여하여 유산균주의 생성을 활성화시킴을 특징으로 하는 인삼열매 발효액의 제조방법.
