Abstract
물기와 줄기를 제거한 갓잎을 5㎝×1㎝ 크기로 자른 후 100℃의 수증기에 2분 정도 증제시킨 후 10℃이하, 바람직하게는 4~5℃에서 30분 정도 급냉시킨다.
급냉시킨 상기 갓잎을 25~30℃에서 3시간 동안 1차 건조시키고, 건조된 갓잎을 20cm 두께로 쌓아 25~30℃에서 10시간 동안 숙성시킨 다음 숙성된 갓잎차를 수분함량이 약 5% 이하가 되도록 하여 포장하는 공정을 통해 제조된다.
본 발명으로 제조된 오 마이 갓잎차는 차의 원료로 갓잎 만을 사용하고 건조와 숙성과정을 통해서 갓에 함유된 아미노산 성분 중 글루탐산을 증진시켜 감칠맛과 구수한 향미를 높였다. 때문에 갓 고유의 향과 맛을 살려서 차로 마실 수 있으며, 갓잎 고유의 보라색을 2분 정도의 아주 짧은 시간에 용출시켜 오감을 느낄 수 있다.
본 발명의 오 마이 갓잎차를 핫 티로 뜨거운 물에 우려서 마시면 갓의 주요성분 중 엽산과 아미노산, 보랏빛의 안토시아닌 등 수용성 성분을 섭취할 수 있고, 갓잎차를 그대로 씹어서 먹으면 갓잎에 함유된 지용성 성분까지도 모두 섭취할 수 있다.
본 발명으로 제조된 오 마이 갓잎차는 차로 마시는 것 외에도 음식을 조리할 때 조미료, 색소, 제과 제빵의 재료로도 사용할 수 있다.
본 발명의 오 마이 갓잎차에 레몬즙을 첨가하면 레몬즙의 양에 따라 청보라색부터 핑크색까지 다양한 차색을 연출할 수 있어 차를 마실 때 갓잎차 맛의 향상과 더불어 신비스런 탕색의 변화 속에서 오감을 즐길 수 있다.

Claims (4)
- 오 마이 갓잎차의 제조방법에 있어서,
수확한 갓잎을 깨끗이 씻고 물기 및 줄기를 제거한 다음 갓잎을 5㎝×1㎝ 크기로 자른 다음, 상기 일정하게 자른 갓잎을 증기로 2분 동안 증제시킨 후 4~5℃의 온도에서 30분 정도 급냉시키는 단계; 및
상기 증제 후 급냉시킨 갓잎을 25~30℃의 온도에서 3시간 동안 1차 건조시키는 단계; 및
상기 1차 건조된 갓잎을 80~90℃의 온도에서 40분 동안 2차 건조시키는 단계; 및
건조된 상기 갓잎을 20cm 두께로 쌓은 다음 25~30℃의 온도에서 10시간 동안 숙성시키는 단계; 및
상시 숙성된 갓잎차를 수분함량 5% 이하가 되도록 하는 것을 특징으로 하는 오 마이 갓잎차의 제조방법.
- 제1항에 있어서,
상기 오 마이 갓잎차 100중량부에 레몬, 요거트, 꿀, 허브 또는 홍차 5~30중량부를 혼합하는 것을 특징으로 하는 오 마이 갓잎차의 제조방법.
- 제2항에 있어서,
상기 오 마이 갓잎차에 혼합되는 레몬차는 설탕과 레몬을 1 : 1로 배합한 레몬차인 것을 특징으로 하는 오 마이 갓잎차의 제조방법.
- 제1항에 있어서,
상기 오 마이 갓잎차는 잎차 또는 가루차 형태로 포장한 제품인 것을 특징으로 하는 오 마이 갓잎차의 제조방법.
