Claims (4)
- 소정의 열판에 닭고기, 양념장 및 야채를 포함하여 넣고 혼합하며 볶아서 조리되는 닭갈비에 있어서,
상기 닭고기는 인삼, 키위 및 된장이 포함된 식재료를 넣고 100℃로 끓인 물에 불을 제거한 상태에서 2~3분간 데친 오골계 살코기이고,
상기 양념장은 오골계 살코기 700g을 기준으로 하여 일반 고춧가루 1.2g, 청양 고춧가루 2.4g, 간장 5㎖, 마늘 4g, 생강 4g, 양파 1g, 키위 2g, 물엿 1㎖, 정종 1㎖, 현미가루 0.5g, 인삼 생즙 0.2g, 오골계 뼈 육수 1㎖, 엄나무 물 1㎖ 및 된장 0.5g이 포함되도록 넣고 70시간 내지 7주일 동안 3~5℃에서 저온 숙성시킨 것이고,
상기 야채는 자색 양배추, 자색 양파, 자색 고구마, 자색 감자 및 검은 깻잎 중 어느 하나 이상을 포함하는 것을 특징으로 하는 흑 닭갈비.
- 제 1 항에 있어서,
상기 식재료는 물 1리터에 오골계 살코기 700g을 기준으로 하여 상기 인삼 8~12g, 상기 키위 15~25g 및 상기 된장 2~4g이 포함되도록 한 것을 특징으로 하는 흑 닭갈비.
- 삭제
- 제 1 항 또는 제 2 항에 있어서,
상기 양념장은 뽕잎가루가 0.1~0.3g 더 포함되어 숙성된 것이고,
상기 닭갈비에는 쑥과 쌀이 1:4 중량비율로 배합된 쑥 가래떡이 더 포함된 것을 특징으로 하는 흑 닭갈비.
