Claims (4)
- 찹쌀 65중량%로 꼬두밥을 한 다음 물 20중량% 및 엿기름 15중량%가 혼합된 상태의 혼합액에 침지시켜 불린 상태로 12시간 동안 발효시켜 찹쌀 식혜를 제조한 후 찹쌀 건더기가 제거된 찹쌀 식혜를 가열하여 조청 직전 상태의 식혜졸임액을 얻는 식혜졸임액 제조단계와;상기 식혜졸임액 100중량부에 고춧가루 50중량부, 메주가루 50중량부, 소금 25중량부 및 간장 25중량부가 혼합된 혼합물을 얻기 위한 혼합단계와;상기 혼합단계를 통해 혼합된 상태의 상기 혼합물을 10~20℃의 온도로 6개월 동안 발효 및 숙성시켜 고추장을 얻기 위한 발효 및 숙성단계;를 포함하여 이루어지는 것을 특징으로 하는 찹쌀 식혜 고추장의 제조방법.
- 제 1항에 있어서,상기 식혜졸임액 제조단계에서 꼬두밥 상태로 불려진 상기 찹쌀 건더기가 제거된 상기 찹쌀 식혜를 120~150℃로 1.0~1.5시간 동안 가열한 후 80~100℃로 0.5~1.0시간 동안 가열하고, 다시 40~45℃로 0.5~1.0시간 동안 가열하여 조청 직전 상태로 졸이는 것을 특징으로 하는 찹쌀 식혜 고추장의 제조방법.
- 제 1항에 있어서,상기 혼합단계에는 상기 식혜졸임액 100중량부에 대하여 정종 12중량부가 더 혼합되는 것을 특징으로 하는 찹쌀 식혜 고추장의 제조방법.
