Claims (2)
- 효소반응을 통한 양파의 자극적인 맛과 냄새 발생을 억제하기 위하여 양파의 껍질을 벗기지 않은 채 통째로 세척하는 세척단계와;세척된 양파를 공정 간 이송이 용이하도록 분쇄기에 투입하여 죽 형태로 가공하는 분쇄단계와;분쇄된 죽 형태의 양파를 가열탱크로 펌핑하여 이송하고 양파의 영양소 파괴를 최소화하기 위하여 70~120℃의 스팀으로 4~5시간 동안 교반가열하는 가열단계 및;양파 가열물로부터 고형물을 분리시켜 양파즙을 추출하는 추출단계;로 이루어진 것을 특징으로 하는 양파즙 제조방법.
- 제 1항에 있어서,상기 추출단계에서 얻어진 양파즙을 90℃의 저장탱크로 이송시켜 멸균처리하고, 상등액만을 취하여 포장하는 단계를 더 포함하는 것을 특징으로 하는 양파즙 제조방법.
