- 건조하고자 하는 과일 및 야채를 선별하여 세척한 다음 1~1.5㎝의 두께로 슬라이스하는 슬라이스 단계와;물과 올리고당을 2:1의 중량비로 혼합하고, 혼합액에 혼합액 대비 소금 1 중량부, 레몬즙 10 중량부를 첨가하여 당액을 제조하는 당액 제조 단계와;상기 당액을 제조시에 비트, 치자, 케일, 당근, 미나리 중 선택된 어느 하나의 천연 염색물을 투입하여 당액을 염색하는 염색 단계와;상기 당액에 슬라이스된 과일 및 야채를 10~15초 담갔다가 건져 과자를 제조하고, 과자를 채에 거르는 과자 제조 단계와;상기 과자를 -50~-60℃의 온도로 급냉동시키는 냉동 단계와;급냉동된 과자를 25~35℃의 온도로 1~2일동안 동결 건조시키는 동결 건조 단계; 및상기 동결 건조 단계를 통해 동결 건조가 완료된 건조과자를 밀봉 포장하는 포장 단계를 포함하고,상기 동결 건조 단계를 통해 동결 건조가 완료된 상기 건조과자에 젤라틴액을 스프레이로 균일하게 도포한 후 드라이오븐을 이용하여 45~60℃의 온도에서 12~24시간동안 건조시켜 수분 함량을 80~95%로 유지시켜 제리 형태의 건조과자를 제조하는 제리 건조과자 제조단계를 더 포함하는 것을 특징으로 하는 생과일 및 생야채를 이용한 건조과자 제조방법.
- 제 3 항에 있어서,상기 젤라틴액은,물과 젤라틴을 99.3:0.7의 중량비로 혼합하여 제조되는 것을 특징으로 하는 생과일 및 생야채를 이용한 건조과자 제조방법.
