Claims (3)
- 냉면의 제조에 있어서, 소맥분, 메밀가루 및 전분을 함유하는 곡물가루 혼합물 100중량부에 대하여 미나리농축액 3-10중량부( BRIX 70% 기준)와 적량의 물을 가하여 반죽을 준비하는 단계, 준비된 반죽을 압출성형기에 투입하여 면을 압출하는 단계, 압출된 면을 컨베이어 위에 실어 반송하는 중에 냉풍으로 냉각하는 단계, 냉각된 면을 냉장실에서 넣어 저온숙성하는 단계, 숙성된 면을 농도 70%∼98%의 에틸알코올에 침지하여 살균하는 단계 및 살균된 면을 단량별로 포장하는 단계를 포함하는 미나리 농축액 함유 냉면의 제조방법
- 제 1 항에 있어서, 미나리 농축액은 미나리를 분쇄(chopping)하여 60∼80℃에서 가열추출하고 진공증발기에서 60∼70℃의 온도로 진공농축한 것임을 특징으로 하는 방법.
- 제 1 항에 있어서, 상기 숙성은 면을 0-7℃의 냉장실에 넣고 18-24시간 수분을 조절하여 수행하는 것을 특징으로 하는 방법.
