Claims (4)
- 반죽재료를 준비하는 반죽재료준비단계(S12)와,준비된 반죽재료를 교반 및 혼합하는 반죽혼합단계(S14)를 포함하는 호도과자용 반죽 제조방법에 있어서,상기 반죽혼합단계(S14)에서는 밀가루 1kg에 대해, 물 0.6 내지 0.72Kg, 특란 기준의 계란 6~8개, 설탕 0.7~0.9kg, 용융상태의 마아가린 0.05 내지 0.07kg, 포도당 20 내지 25g 및 베이킹 파우더 19 내지 22g이 혼합되어지며,상기 반죽혼합공정(S14)에서, 호도과자 외피의 기공 및 조직을 치밀화하는 분유가 0.05~0.3kg 더 첨가되어 혼합되어지는 것을 특징으로 하는 호도과자 제조방법.
