Claims (11)
- チョコレート生地全量に対し、トリメチルピラジンが0.18〜0.22重量%含まれ、及び/又はテトラメチルピラジンが0.73〜0.83重量%含まれていること
を特徴とするチョコレート。 - チョコレート生地全量に対し、アセトアルデヒドが1.11〜1.21重量%含まれ、及び/又はエタノールが16.81〜17.49重量%含まれていること
を特徴とする請求項1記載のチョコレート。 - カカオ豆を炭火による熱で焙煎する焙煎工程を有すること
を特徴とするチョコレートの製造方法。 - 上記焙煎工程では、上記炭火を上記カカオ豆に直接当てること
を特徴とする請求項3記載のチョコレートの製造方法。 - 上記焙煎工程では、上記カカオ豆を90℃〜150℃で焙煎すること
を特徴とする請求項3又は4記載のチョコレートの製造方法。 - 上記焙煎工程では、
上記カカオ豆を120℃で焙煎するステップと、上記カカオ豆を140℃で焙煎するステップと、上記カカオ豆を150℃で焙煎するステップとを含むこと
を特徴とする請求項5記載のチョコレートの製造方法。 - 上記焙煎工程では、上記カカオ豆の焙煎を開始してから10±2〜3分までに、3〜7℃/分のペースで炭火による熱で焙煎し、
焙煎開始後15分から20分に至るまでに、0.5〜3℃/分のペースで炭火による熱で焙煎し、
焙煎開始後20分から23〜24分に至るまでに、0.5〜2.0℃/分のペースで炭火による熱で焙煎した後、この焙煎工程を終了させること
を特徴とする請求項3記載のチョコレートの製造方法。 - 上記焙煎工程では、上記カカオ豆の焙煎を開始してから10±2〜3分までに、3〜7℃/分のペースで炭火による熱で焙煎し、
焙煎開始後15分から20分に至るまでに、1.5〜2.5℃/分のペースで炭火による熱で焙煎し、
焙煎開始後20分から23〜24分に至るまでに、1.0〜1.5℃/分のペースで炭火による熱で焙煎した後、この焙煎工程を終了させること
を特徴とする請求項3記載のチョコレートの製造方法。 - 上記請求項3〜8のうち何れか1項記載の焙煎工程を経て製造されたこと
を特徴とするチョコレート。 - チョコレート生地全量に対し、トリメチルピラジンが0.18〜0.22重量%含まれ、及び/又はテトラメチルピラジンが0.73〜0.83重量%含まれていること
を特徴とする請求項9記載のチョコレート。 - チョコレート生地全量に対し、アセトアルデヒドが1.11〜1.21重量%含まれ、及び/又はエタノールが16.81〜17.49重量%含まれていること
を特徴とする請求項10記載のチョコレート。
