Abstract

PURPOSE:To enable extrusion molding of a food having a definite center hole, by using a screw rotatable in a cylindrical barrel, attaching a die part having an inner mandrel to the front end of the barrel and extending the mandrel toward the extrusion direction. CONSTITUTION:The food extruder is composed of a cylindrical barrel 1, a screw 3 rotating in the barrel 1 and a die hole attached to the front end of the barrel 1. The die 4 is provided with an inner mandrel 5 extended toward the extrusion direction. The extension length of the inner mandrel 5 is >=0.5 times the maximum inner diameter of outer die 4. A food having a central hole of an arbitrary shape can be continuously extrusion molded in high accuracy by changing the cross-sectional shape of the inner mandrel.

As shown in Fig. 4, this is composed of an inner mandrel a and an outer die b, and the inner mandrel a and the outer die are connected to one end of a cylinder barrel e of an extruder equipped with a raw material supply section C and equipped with a screw d. The die b is connected by a wing-shaped support f, forming an annular land. Although there are various land thicknesses and land outer diameters depending on the shape of the intended product, there is no example in which the inner mandrel a is extended from the outer die b in the extrusion direction.

[Problem to be Solved by the Invention 1] When a food material is extruded by an extruder and expands at the die exit, expansion also occurs in a direction perpendicular to the extrusion direction, so the cross section of the hollow inner hole of the expanded material changes depending on the swelling ratio, and its cross-sectional shape, that is, the hollow inner hole, tends to be distorted.

The present invention provides a die whose inner surface of the hollow inner hole is not affected by the degree of swelling during extrusion molding, and which makes it possible to produce a expanded product having a hollow inner hole of any shape. This is the solution.

In other words, in a food extruder, a cylindrical cylinder barrel is used, a screw rotates within the barrel, and a die attached to the tip of the barrel has an inner mandrel extended in the extrusion direction. This solved the problem.

At this time, by varying the shape and slit width of the outer die and inner mandrel of the die part, puffed foods having various shapes such as circular, triangular, star-shaped, etc., and having hollow inner holes of different thicknesses can be obtained. .

The minimum extension length of the inner mandrel must be approximately 0.5 times the maximum inner diameter of the outer die, and the maximum length is preferably approximately 10 times the maximum inner diameter of the outer die.
If it is less than 5 times, the swelling on the inner surface of the hollow inner hole is insufficiently prevented, and if it is more than 10 times, the frictional resistance with the inner mandrel becomes large due to cooling of the extruded food material, which is not preferable.

According to the die according to the present invention, when the food material extruded by the extruder causes swelling at the die exit, the food material is prevented from swelling inside the hollow inner hole. The cross-sectional shape is equal to that of the inner mandrel. Namely.

The food material extruded into the atmosphere from the die exit is cooled and solidified while maintaining the cross-sectional shape of the inner mandrel, so by changing the cross-sectional shape of the inner mandrel, it is possible to create foods with hollow inner holes of arbitrary shapes. can be extruded continuously with high precision.

Furthermore, the extrusion-side aperture surface of the inner mandrel extends in the extrusion direction from the extrusion-side aperture surface of the outer die. Note that the distance from the extrusion opening surface of the outer die to the extrusion opening surface of the inner mandrel is called the inner mandrel extension length.

Food raw materials extruded into the atmosphere from the die tend to expand due to a sudden drop in pressure, but the extension of the inner mandrel prevents the expanded material from expanding inside the hollow inner hole. In addition, the expanded product, which expands only in the direction perpendicular to the extrusion direction and opposite to the inside of the hollow hole, releases thermal energy due to rapid expansion, and as the temperature rapidly decreases, it solidifies and becomes a molded product.

According to this invention, when a food material is extruded using an extruder, a new hollow food product is produced in which the shape of the hollow inner hole is arbitrary and relatively smooth, and the outer surface shows a puffed shape. It had good performance and could be manufactured continuously.
