や捏ねる水そして保存水として使用することにより、オ
ゾンによる殺菌効果と酸化ゲルマニウムによる制菌効果
が得られ、100℃以上の高温に耐える菌についても効
果があり、また、麺の捏ねる水に使用する場合、強力粉
に比べ安価な薄力粉を使用しても麺質が改良され味が良
くなり、また、ゆで麺の洗浄水に利用した場合脱色効果
もあり、白い麺が出来る等極めて有益なる効果を奏する
