Abstract

PURPOSE: Bacillus subtilis is cultured in a medium containing a substance having β-1,4-mannopyranosyl bonds as well as saccharified rice, soybean, molasses or cellulose to produce mannanase in high yield.
CONSTITUTION: In the production of endo-type β-1,4-mannanase (mannase), for example, Bacillus subtilts LB-5-A strain (FERM-5732) or LB-5-B strain (FERM- 5733) and a substance containing β-1,4-mannopyranosyl bonds such as β-1,4-mannan, galactomannan, sacromannan are added to a culture medium containing at leat one of saccharified rice, soybean, coffee bean, corn, wheat bran, and their extract, corn steep liquor, molasses, waste molasses, alcohol distillation waste, cellulose, carboxymethylcellulose, cellobiose and meat essence and the cultivation is conducted at 25W40°C and 5.5W9.5pH.
