Abstract

PURPOSE: To prevent the boiling collapse in cooking of root and fruit vegetables, by dipping the root and fruit vegetables in an aqueous solution of calcium chloride, and heat-treating the vegetables.
CONSTITUTION: Root or fruit vegetables are dipped in an aqueous solution of calcium chloride or calcium carbonate in a concentration of 0.05W3wt%, preferably 0.1W0.7wt%, at ordinary temperture for about 10W60min. and then heat- treated.
