Abstract
PURPOSE: To prepare a dried bonito-like food, by heating slices of various salted fishes not to cause thermal expansion and by drying the slices.
CONSTITUTION: Slices of various small-sized fishes, e.g. mackerels, sardimes, or horse mackerels, are mixed with edible salts, e.g. common salt, phosphates, or acetates, and, if necessary, seasonings or spices, and several slices or more of them are packed into a container not to cause thermal expansion in heat treatment. The slices are then heat-treated by hot water, hot air, or infrared rays, and large lumps hardened by the treatment are taken out of the container, then directly or in a suitable size, if necessary cooled, and dried to a moisture content of 35W40%, and allowed to stand for a suitable period as required.
