Abstract
Description
Claims (44)
- 1.実質的に酸素不透過性のパッケージ内への食品の包装に先立ち、腐敗菌およ び病原菌の成長を拮抗阻害するために効果がある、有効な量の真正衛生菌を食品 に対し接種することを含む食品の保存方法。
- 2.前記真正衛生菌が非病原菌および非腐敗菌である請求項1に記載の食品の保 存方法。
- 3.前記真正衛生菌が成長および増殖の途中で最小限の好ましくない副産物を生 成する条件的、サクロフィリックおよびグラム陽性の細菌である請求項1に記載 の食品の保存方法。
- 4.前記真正衛生菌が乳酸桿菌属に属する細菌から選択される請求項1に記載の 食品の保存方法。
- 5.前記真正衛生菌が絶対ホモ発酵性乳酸桿菌を含む請求項1に記載の食品の保 存方法。
- 6.前記真正衛生菌がグルコン酸塩または五炭糖を実質的に発酵しない請求項1 に記載の食品の保存方法。
- 7.前記真正衛生菌が条件的ヘテロ発酵性乳酸桿菌を含む請求項1に記載の食品 の保存方法。
- 8.前記真正衛生菌が好酸性である請求項1に記載の食品の保存方法。
- 9.前記真正衛生菌が約4〜7のペーハーを有する環境下で増殖可能である請求 項1に記載の食品の保存方法。
- 10.前記真正衛生菌が乳酸を生成する請求項1に記載の食品の保存方法。
- 11.前記真正衛生菌が食品上において約4〜7のペーハーを有する環境を形成 する請求項1に記載の食品の保存方法。
- 12.前記真正衛生菌が食品の実質的な変色を防止する請求項1に記載の食品の 保存方法。
- 13.前記真正衛生菌かラクトバシラス・デルブリュック、ラクトバシラス・ラ イヒマン、ラクトバシラス・イェンセン、ラクトバシラス・ラクティス、ラクト バシラス・ブルバリクス、ラクトバシラス・ヘルベティクス、またはラクトバシ ラス・アシドフィルスを含む請求項1に記載の食品の保存方法。
- 14.前記真正衛生菌が主にラクトバシラス・デルブリュックを含む請求項1に 記載の食品の保存方法。
- 15.前記真正衛生菌が主にハフニア・アルヴイを含む請求項1に記載の食品の 保存方法。
- 16.前記真正衛生菌が約摂氏−1〜35度の温度域で増殖することが可能であ る請求項1に記載の食品の保存方法。
- 17.前記真正衛生菌の接種の後、食品を約摂氏−1〜35度の温度域に維持す る工程を更に含む請求項1に記載の食品の保存方法。
- 18.前記真正衛生菌の接種工程に先立ち、食品上に存在する細菌の総数を実質 的に減少させる工程を更に含む請求項1に記載の食品の保存方法。
- 19.前記真正衛生菌の接種工程に先立ち、食品上に存在する細菌の総数を、食 品1gあたり約5,000個未満に減少させる請求項1に記載の食品の保存方法 。
- 20.前記細菌数の減少工程が前記真正衛生菌の接種工程に先立ち、食品に対し 有機酸を接触させることを含む請求項19に記載の食品の保存方法。
- 21.前記の酸が酢酸または乳酸を含む請求項19に記載の食品の保存方法。
- 22.前記細菌数の減少工程が腐敗菌および病原菌の実質的な排除に有効な高温 下に、食品を曝す食品の照射処理、食品に対し有機酸を接触させる処理、または 食品に対し抗生物質を接触させる処理を含む請求項19に記載の食品の保存方法 。
- 23.前記真正衛生菌の接種工程が前記包装の封印に先立ち、食品包装内へ凍結 乾燥した前記真正衛生菌を配置することを含む請求項1に記載の食品の保存方法 。
- 24.病原菌または腐敗菌に対し毒性がある抗生物質を生成することが可能な細 菌を食品に接種することを更に含む請求項1に記載の食品の保存方法。
- 25.前記真正衛生菌が病原菌または腐敗菌に対し毒性がある抗生物質を生成す ることが可能な請求項1に記載の食品の保存方法。
- 26.前記食品が乳製品、果物、野菜、穀類、ならびに家禽、牛、豚、子羊、魚 、海産食品の肉を含む請求項1に記載の食品の保存方法。
- 27.請求項1の方法に基づいて製造された食品。
- 28.請求項1の方法に基づいて製造され、貯蔵有効期間が約150日までであ る肉製品。
- 29.請求項1の方法に基づいて準備された肉を含み、貯蔵有効期間が少なくと も約40日以上である肉製品。
- 30.食品上の細菌の総数を減少させる工程と、腐敗菌および病原菌の成長を拮 抗阻害するために効果かある、有効な量の真正衛生菌を食品の表面に接種する工 程と、実質的に酸素不透過性の包装材料により食品を真空包装する工程と、約摂 氏−1〜7度に冷蔵された環境下に食品を保存する工程とを含む食品の保存方法 。
- 31.請求項30の保存方法に基づいて保存された食品。
- 32.前記食品上の細菌の総数を減少させる工程が動物を屠殺する前に動物の毛 を脱毛処理することと、 前記動物に対し有機酸を塗布することとを含む請求項30に記載の食品の保存方 法。
- 33.前記真正衛生菌がラクトバシラス・デルブリュック、ラクトバシラス・ラ イヒマン、ラクトバシラス・イェンセン、ラクトバシラス・ラクティス、ラクト バシラス・ブルバリクス、ラクトバシラス・ヘルベティクス、またはラクトバシ ラス・アシドフィルス、あるいはハフニア・アルヴィを含む請求項1に記載の食 品の保存方法。
- 34.前記動物から得られた肉を前記真正衛生菌の接種後に約摂氏−1〜7度の 温度域に維持する工程を更に含む請求項30に記載の食品の保存方法。
- 35.動物の屠体上に存在する細菌の総数を肉1gあたり約5,000個未満に 減少させることと、 前記屠体から得られた肉に対し、腐敗菌および病原菌の成長を拮抗阻害するため に効力がある有効な量の真正衛生菌を接種することと、前記真正衛生菌の接種工 程後、前記肉を酸素不透過性プラスチック包装内に真空包装することとを含む肉 の貯蔵有効期間を延長する方法。
- 36.肉加工施設内において動物を屠殺し、前記動物の皮を剥離し、前記動物の 屠体に対し有機酸溶液を接触させ、前記動物の肉を加工し、そして前記肉をプラ スチック製バッグ内に真空包装することにより加工された肉製品の保存方法であ って、 腐敗菌および病原菌の成長を拮抗阻害するために有効な量の真正衛生菌を肉に接 種することと、 前記真正衛生菌の肉への接種工程が前記肉に対し有機酸を接触させる工程につづ いて実行される肉製品の保存方法。
- 37.動物を屠殺し、前記動物の屠体に対し有機酸を接触させる肉の加工方法で あって、 前記屠体に対し有機酸を接触させる工程の後、不透過性包装内に肉を包装する前 までの間に、病原菌および腐敗菌の増殖を有効に阻害するために有効な量の真正 衛生菌を前記屠体に対し接種することを含む肉の加工方法。
- 38.腐敗菌および病原菌の成長を拮抗阻害するために効力がある、有効な量の 真正衛生菌を食品加工施設に対し接種することを含む食品加工施設の処理方法。
- 39.食品加工に用いられる用具に真正衛生菌が有効に接種される請求項38に 記載の処理方法。
- 40.前記真正衛生菌の接種に先立ち、前記食品加工施設を有効に殺菌処理する ことをさらに含む請求項38に記載の処理方法。
- 41.前記真正衛生菌の接種により食品に対し腐敗菌および病原菌が接触する機 会が効果的に減少させられる請求項38に記載の方法。
- 42.腐敗菌および病原菌の成長を拮抗阻害するために有効な量の真正衛生菌を 食品に対し接種することを含む食品の悪臭を減少する方法。
- 43.腐敗菌および病原菌の成長を拮抗阻害するために有効な量の真正衛生菌を 生肉に対し接種することを含む生肉の変色を低減する方法。
- 44.肉の同時腐敗を伴うことなく酵素による肉の自然熟成を許容するために十 分な期間、腐敗菌および病原菌の成長を効果的に拮抗阻害または排除するために 有効な量の真正衛生菌を肉製品に接種することを含む肉製品を柔らかくする方法 。
