These ranges are constantly heated, so if they become dirty due to oil stains, burnt food, etc. during business hours, it is necessary to remove and clean them without stopping heating, especially in restaurants that are open 24 hours a day. This is an important issue in such cases. Conventionally, in such cases, a type of grindstone called a griddle stone was used to remove the dirt by sprinkling cooking oil on it. However, it takes a lot of effort and time to scrape it off with a whetstone, and since it requires a lot of force, the worker's hands and fingers may come into contact with the heated plate, and the oil may scatter. There were problems such as causing burn accidents.

Furthermore, in the field of cleaning oil stains from hard surfaces, alkaline cleaning agents with good cleaning power are generally used. However, when using an alkaline cleaning agent, it is necessary to remove the alkaline content remaining on the iron plate after cleaning, so repeated washing with water or a neutralized hydrous liquid acidic rinse agent is used. However, this caused the temperature of the hot iron plates to drop, resulting in energy loss and temporary suspension of business operations.

In addition, when a water-containing liquid acidic rinse agent is sprinkled on a hot iron plate,
There was a problem in that the water was heated and rapidly evaporated and scattered, and the ingredients in the rinse agent and residual alkaline agents adhered to the skin, causing ``itching.''

The present invention is capable of neutralizing residual alkaline content in a small amount in a short time by preventing a drop in the temperature of the iron plate after cleaning stains on a hot cooking iron plate with an alkaline cleaning agent. , provides a rinse agent composition that causes less skin irritation.

The long-chain fatty acids C, ~C2 are decomposed by peeling off the oil stain layer from the hot iron plate with an alkaline detergent, lifting it up, and decomposing it.
It is possible to quickly neutralize the alkaline content that remains after being easily removed with a hot iron plate, etc., and to suppress the temperature drop of the hot iron plate by avoiding washing with water as much as possible. Moreover, even if there is any scraping or wiping residue after rinsing, there is little danger in terms of hygiene.

When used, the nonionic organic compound quickly spreads the acidic substance on the hot iron plate without rapidly evaporating or scattering on the hot iron plate like water. Therefore, non-ionic organic compounds do not easily decompose or evaporate or scatter on a hot iron plate at 100 to 250 degrees Celsius, and are easily compatible with oil, so even if they remain and get mixed into cooked products. Specific examples of such nonionic organic compounds, which are preferably less hazardous to hygiene, include soybean oil, palm oil,
These include fats and oils such as rapeseed oil and beef tallow, hydrocarbons such as liquid paraffin and solid paraffin, polyols such as polyethylene glycol and polypropylene glycol, and nonionic surfactants, which may be used alone or in combination. It is used as

According to the rinse agent composition of the present invention, by combining a C8-C2° long-chain fatty acid and a nonionic organic compound, the rinse agent composition of the present invention can be rapidly removed on an iron plate like when water is used as a medium. It does not evaporate and scatter, and is quickly neutralized.

Further, the temperature of the hot iron plate is prevented from decreasing due to evaporation of water. Therefore, the workability is good because the skin is not irritated by evaporation and scattering, and moreover, the alkaline content remaining after cleaning with an alkaline detergent can be neutralized in a short time with a small amount of rinsing agent.
