本発明は、球状の油揚げ食品を得るためにの殻
粉、膨張剤および水を主成分とする冷凍生地を製
造する方法に関する。近年、殻粉を原料とした球
状の油揚げ食品例えばたこやき風の油揚げ製品が
市場に出回つているが、このものは生地を手作業
あるいは成形機により球状にした後、油揚げする
方法により行われている。しかしながら、この方
法は粘度が200000cpsを越える固い非流動性また
は難流動性生地の場合にのみ可能であり、それ以
下の粘度の低い流動性の生地では球状に成形する
ことが不可能であつた。また、粘度の高い固い生
地の使用は、得られる球状油揚げ食品の食感を固
い劣つたものにするという欠点があつた。その
上、手作業等により球状体を製造する場合には球
状体の製造が容易ではなく、しかも時間がかかる
という問題が生じていた。
本発明者は、前記欠点を解消する油揚げ食品の
製造法について鋭意研究の結果、粘度の低い、流
動性の高い生地を使用しても、これをある特定の
形状を有する容器に充填して凍結固化することに
より、油揚げした時に意外にも球状になる冷凍食
品が得られることを見出した。
すなわち、本発明は殻粉、膨張剤および水を含
有し且つ500〜200000cpsの粘度を有する生地を、
容器の深さ:容器の開口部径の比が1:1〜1.7
の範囲にあり且つ前記の開口部径が底部径と等し
いかまたはそれより大である容器に充填して凍結
することを特徴とする油揚げ調理用冷凍生地の製
造法である。
ここで、上記の生地の粘度はB型粘度計により
測定した粘度をいう。本発明に使用する粘度500
〜200000cpsの生地は一般には殻粉と、殻粉に対
して1〜8重量%の膨張剤と、同じく50〜150重
量%の水とを混合して調製すればよい。このよう
にして得られた生地は例えば平板上に流した場
合、該平板上に薄層状に広がり、一定の形状を保
持することができない性質のものである。粘度が
500cps未満の場合には、油揚げの際、揚油中に生
地が散逸し、目的とする球状食品の製造ができな
い。また200000cpsを越えると流動性が悪いので
容器に所望する充填が不可能となる。
本発明の製造法に用いられる殻粉としては、小
麦粉単独かあるいは小麦粉と米粉、コーンフラワ
ー、コーンスターチ、オートフラワー等を適宜組
合わせたものが挙げられる。
また、膨張剤としては、炭酸水素ナトリウムを
主成分とするものが好ましく、更に酒石酸、酒石
酸水素カリウム、グルコノデルタラクトン、みよ
うばんおよび第1燐酸ナトリウム等から選択した
1種またはそれ以上の化合物が含まれていてもよ
い。この膨張剤は生地の粘度が比較的高い場合に
は速効性でガス発生量の多いものを用いるのが望
ましい。
次に得られた生地を所定形状の容器に充填す
る。成形凍結のための容器への生地の充填に際し
てはうずらの茹卵、餡その他の具材を生地内部に
挿入してもよい。
本発明において生地の凍結に用いられる容器
は、容器の深さ:容器の開口部径の比が1:1〜
1.7の範囲にあり且つ前記開口部径が底部径と等
しいかまたはそれより大であるものであり、具体
的には例えば内部形状が円柱状、円錐台状、楕円
柱状、角柱状、角錐台状およびこれらの変形にな
るものが挙げられる。
本発明でいう容器の開口部径とは開口部の最大
径つまり開口部が円の場合は直径を、楕円の場合
は長径を、多角形の場合は最長の対角線の長さを
いう。また容器の底部径とは底部の最大径つまり
底部が円の場合は直径を、楕円の場合は長径を、
多角形の場合は最長の対角線の長さをいう。本発
明においては容器の深さ、開口部径および底部径
の長さが互いに過度に懸隔しないのが望ましく、
例えば円柱状の場合、深さと開口部径とを同じく
するかあるいは深さおよび開口部径の一方が他に
対して2倍以上にならないようにし、円錐台状お
よび角錐台状の場合には深さが開口部径より短く
且つ底部径より長くする。
本発明で使用する容器の材料としては、プラス
チツク、金属、ゴム、木材およびガラスその他の
窯業材料等が挙げられる
かくして容器に充填された生地は凍結処理に付
されて冷凍生地が製造されるが、これは常法の凍
結手段により行われる。凍結は通常生地全部につ
いて適用されるが、生地表面を凍結するだけでも
差し支えない。なお生地の粘度が低く且つ生地中
に具材を含有させる場合には容器を回転させなが
ら凍結すると、具材の位置を中心部に安定させる
ことができる。このようにして製造された冷凍生
地は非球状を呈しており、これを容器から回収す
るかまたは容器と共に保存、流通および販売する
ことができる。
このようにして得られた冷凍生地は油揚げする
ことにより所望の球状の調理食品となすことがで
きる。揚油の温度は通常160〜180℃の範囲で適宜
選択すればよい。また油揚げを140℃程度から始
めて徐々に前記温度域に高めてもよい。なお、油
揚げの際には必ずしも生地の中心部まで加熱調理
しなくとも製品の球状化を達し得るが、この場合
は供食時に生地の中心部までの再加熱による調理
を行う必要がある。
本発明によれば非球状冷凍生地をそのまま直接
油揚げすることにより何故に球状油揚げ製品が形
成されるかの理由は明らかではないが、おそらく
は冷凍生地が揚油中で処理されて解凍−油揚げ過
程を経る際には実質的な油揚げの生ずる前に解凍
と平行して膨張剤の作用が起こり、その結果多面
体の各平面について曲面化現象が生じて全体とし
て球状となると共に油揚げが進行して球状状態が
固定されるものと考えられる。従つて上述したよ
うな解凍−油揚げの進行の際、膨張剤による膨化
が起こることが肝要であり、このためには冷凍生
地の形状に加えて生地中の膨張剤の量と揚油温度
が適正なバランスに保たれることが重要である。
次に本発明を例により更に詳しく説明する。
参考例
本発明における生地粘度が油揚げ後の食品の形
状におよぼす影響を本例により示す。
小麦粉100g、膨張剤(炭酸水素ナトリウム25
%、酒石酸10%、酒石酸水素カリウム10%、みよ
うばん10%、第1燐酸ナトリウム20%、コーンス
ターチ25%)3gおよび砂糖20gの混合物に加水
し、混捏して下記6種の粘度を有する生地を調整
した。これらの生地40gを第2図および第4図に
それぞれ示す四角錘台状(図中、a=4cm、b,
h=3cm、深さh:開口部径a=1:1.33、深さ
h:底部径b=1:1)および円柱状(図中、a
=4cm、h=3cm、深さh:開口部径および底部
径a=1:1.33)のプラスチツク製容器に充填
し、−20℃で凍結させた後、容器より取り出して
凍結生地を製造した。これを170℃で油揚げして
得られた製品の形状を観察した。その試験結果を
示せば第1表のとおりである。

した後、−30℃で表面を凍結して冷凍生地を製造

た。このものを供食時にオーブンで再加熱した。
実施例 3
小麦粉100g、速効性膨張剤(炭酸水素ナトリ
ウム30%、酒石酸5%、酒石酸水素カリウム20
%、グルコノデルタラクトン10%、コーンスター
チ35%)2g、砂糖15g、菜種油10g、白こしよ
う0.2g、食塩0.1g、卵100gおよび水50gを混
合して粘度2000cpsの生地を得た。この生地40g
のほぼ中心部にブランチングした味付けじやがい

錘台状のプラスチツク製容器(図中、a=5cm、

次いでこれを容器から取り出し8分間かけて、
140℃から180℃まで油を昇温させながら油揚げし

のを供食時に電子レンジにて再加熱した。
実施例 4
小麦粉50g、コーンスターチ50g、遅効性膨張
剤(炭酸水素ナトリウム25%、みようばん10%、
第1燐酸ナトリウム30%およびコーンスターチ35
%)3g、砂糖10g、大豆油8g、グアーガム3
g、ナツメグ0.5g、卵50gおよび水50gを混合
して粘度80000cpsの生地を得た。この生地100g
のほぼ中心部に調理した挽肉を位置せしめるよう
にして、第4図に示す円柱状のプラスチツク製容

および底部径=1:1.2)に入れて、−50℃で中心
部まで凍結させて冷凍生地を製造した。その後、
これを容器から取り出し175℃で5分間油揚げし
て直径5.5cmの球状の油揚げ食品を得た。このも
のを供食時に175℃で5分間、再度油揚げした。
実施例 5
小麦粉50g、コーンフラワー50g、遅効性膨張
剤(炭酸水素ナトリウム20%、みようばん15%、
第1燐酸ナトリウム20%およびコーンスターチ45
%)5g、砂糖20g、大豆油5g、キサンタンガ
ム1g、ストロベリーフレーバー0.1g、卵20g

℃で8分間油揚げして、直径6cmの球状の食品を
得た。供食時には170℃で5分間、再度油揚げし
