Abstract

PURPOSE: To obtain a fructan composition improve in caking properties, deliquescence, water retention, browning, sweetness, digestibility, etc., by separating a fraction having a specified degree of polymerization from β-2,1 fructan having a specified degree of polymerization.
CONSTITUTION: A fraction having a degree of polymerization of 5 or below is separated from β-2,1 fructan having a distribution of polymerization degrees of 1-106 by fractionation, for example, with an ultrafilter membrane of a fractionation mol.wt. of 2000 to obtain the purpose composition based on β-2,1 fructan of a degree of polymerization of 10-106. Because a membrane having the above fractionation mol.wt. of below 2000 has a high retention rate of a polymerization degree of about 4 and is not satisfactory for the fractionation, the purity of the obtained fructan composition is low. Because a membrane having a fractionation mol.wt. of above 2000 has a low retention rate of a polymerization degree of 5 or above, the yields of the obtained fructan composition is low.
