本発明者らは、上記課題を解決すべく鋭意検討した結果、花椒を油脂中で100℃未満の品温で加熱した後に油脂中で花椒を砕くことにより、花椒特有の華やかで爽やかな風味を長期間保つことが可能な花椒含有組成物を製造することができることを見出した。また、さらに驚くべきことに、この花椒含有組成物は、花椒の渋い風味が抑えられており、花椒特有の華やかで爽やかな風味が際立っていることを見出し、本発明を完成させた。
すなわち、本発明は、以下に示す花椒含有組成物の製造方法及び食品の製造方法を提供するものである。
〔1〕花椒のホールを油脂中に分散させる工程1と、
