ヌートカトンは、例えば、グレープフルーツ果皮に存在するセスキテルペンケトンであり、グレープフルーツの特徴的な香気香味を有するため、各種の飲食品等にグレープフルーツ様の香味を賦与するために広く使用されている(「合成香料」印藤元一著,化学工業日報社発行,423−424頁,1996年)。

近年、消費者の嗜好性が多様化してきていることに伴い、各種各様の商品の開発が望まれている。特に、飲食品・香粧品業界ではこの傾向が強く、消費者の嗜好性に合うバラエティーに富んだ飲食品、香粧品の開発が強く要求されている。これらの要求に対して、飲食品、香粧品の一つの原料素材である香料についても、従来から提案されている香料化合物だけでは十分には対応しきれず、従来にないより天然感のある香気香味特性を有し、且つその持続性に優れた香気香味賦与剤の開発が緊急の課題となっている。

【課題を解決するための手段】
本発明者らは、上記の課題を解決すべく鋭意検討を行った結果、今回、ヌートカトンを主成分とし且つさらにバレンセンエポキシドおよびヌートカトールを含有してなるヌートカトン混合物を、飲食品などの香気香味賦与剤として使用することにより、ヌートカトン単独で使用したものに比べ、格段に優れた天然感と持続性のあるグレープフルーツ様の香気香味を賦与することができることを見いだし本発明を完成するに至った。

バレンセンエポキシド(1,10-epoxy-valencene;6,7-dimethyl-9-isopropenyl-2-oxa-tricyclo[5.4.0.01,3]undecane)とヌートカトール(8-isopropenyl-5,6-dimethylbicyclo[4,4,0]deca-1-ene-3-ol)は、オレンジジュースの揮発性成分として微量見出されている(J.Essential Oil Research.,8(6),587-595(1996))。また、バレンセンエポキシド及びヌートカトールは、バレンセンを酸素又は酸素含有ガスで酸化してヌートカトンを製造する際の副生成物として少量生成するが(特公平2−16739号公報)、バレンセンエポキシド及びヌートカトールをヌートカトンに積極的に含有せしめることにより、天然感に優れ、持続性のあるグレープフルーツ様の香気香味を賦与増強でき、飲食品などの香気香味賦与剤として有用であることは従来全く知られておらず、本発明者らが初めて見いだしたことである。

かくして本発明によれば、ヌートカトンを主成分とし且つさらにバレンセンエポキシドおよびヌートカトールを含有してなるヌートカトン混合物を含むことを特徴とする香気香味賦与剤を提供するものである。

【発明の実施の形態】
本発明は、ヌートカトンを主成分とし且つさらにバレンセンエポキシドおよびヌートカトールを含有してなるヌートカトン混合物を含む香気香味賦与剤である。本発明のヌートカトン混合物におけるバレンセンエポキシドおよびヌートカトールの混合割合は、厳密に制限されるものではなく、香気香味賦与剤の使用目的等に応じて変えることができるが、一般には、バレンセンエポキシドとヌートカトールの合計で、ヌートカトン混合物の全重量を基準として0.01〜10重量%、好ましくは0.1〜5重量%の範囲内が適当である。

また、本発明のヌートカトン混合物に含有されるバレンセンエポキシドとヌートカトールの相対的混合比率も、特に制限されるものではなく、香気香味賦与剤の使用目的等に応じて変えることができるが、一般には、バレンセンエポキシド1重量部あたりヌートカトールを0.1〜10重量部、好ましくは1〜5重量部の範囲内で用いるのが好適である。

本発明の香気香味賦与剤の有効成分であるヌートカトン混合物を調製する方法としては、特に制限されるものではなく、例えば、天然物からの抽出又は化学合成的に製造されたヌートカトンに、バレンセンエポキシドおよびヌートカトールを上記の混合比率及び相対的混合割合で配合することにより調製することができる。また、例えば、特公平2−16739号公報に記載されている如く、バレンセンを酸素又は酸素含有ガスで酸化することにより得られる、副生成物としてバレンセンエポキシドおよびヌートカトールを含有するヌートカトン生成物を精製することなく、そのままヌートカトン混合物として使用することもできる。

本発明の香気香味賦与剤には、上記のヌートカトン混合物に、さらに、天然感があり、持続性のあるグレープフルーツ様香気香味に影響を及ぼさない範囲で各種の天然香料、合成香料を配合することができ、例えば、「特許庁公報、周知慣用技術集(香料)第II部食品香料,P125−130,平成12年1月14日発行」に記載されている如き天然香料、合成香料などを適宜配合することもできる。

かくして、本発明により提供される、ヌートカトンを主成分とし且つさらにバレンセンエポキシドおよびヌートカトールを含有するヌートカトン混合物を含む香気香味賦与剤を利用すれば、天然感があり、かつ持続性のあるグレープフルーツ様の香気香味が賦与された飲食品類、香粧品類、保健・衛生・医薬品などを提供することができる。例えば、果汁飲料類、果実酒類、スポーツ飲料類、低アルコール飲料類、乳飲料類、炭酸飲料類のごとき飲料類;アイスクリーム類、シャーベット類、アイスキャンデーのごとき冷菓類;和洋菓子類、ジャム類、チューインガム類、パン類、キャンデー類のごとき嗜好品類;各種インスタント飲料類;各種スナック食品類などに本発明の香気香味賦与剤の適当量を添加することにより、これら飲食品類に天然感があり、かつ持続性のあるグレープフルーツ様の香気香味を賦与することができる。また、例えば、シャンプー類、ヘアークリーム類、ポマード類、その他の毛髪用化粧料基剤;オシロイ、口紅、その他の化粧料基剤や化粧料洗剤基剤などに本発明の香気香味賦与剤の適当量を添加することにより、これら化粧品類に天然感があり、かつ持続性のあるグレープフルーツ様の香気を賦与することができる。さらにまた、本発明の香気香味賦与剤は、洗濯用洗剤基剤、消毒用洗剤類、室内芳香剤その他各種の保健・衛生材料類;医薬品の服用を容易にするための矯味、賦香剤などの保健・衛生・医薬品類に配合することもできる。
