【発明の属する技術分野】
本発明は、具材にバッターを付着させ、更にブレダー用ミックス粉を付着させて油ちょうし、冷凍する揚げ物の製造方法に関する。

【従来の技術】
具材にバッターを付着させ、更にブレダー用ミックス粉を付着させて油ちょうして得られる揚げ物が知られている。このような揚げ物においては、衣のサクサクとした食感が美味しさの1つの要素となっている。この食感は、揚げたてのときには比較的良好であるが、油ちょう後の時間が経過するに伴って、具材の水分が衣に移行するなどの理由から、サクサク感がなくなって劣化する傾向がある。特に、油ちょう済みの揚げ物を冷蔵又は冷凍保存した後、電子レンジ等で再加熱して食する場合に上記食感の劣化が顕著に起こる。

このような揚げ物の問題点を改善するために、衣材の改良に関する各種の提案がなされている。

例えば、特開平7−155127号には、油脂、でんぷん及び植物性蛋白をバッター原料の必須成分とし、油脂をバッター原料の15〜60重量%含むことを特徴とするバッター、及びこのバッターを付着させ、更にパン粉を付着させたフライ食品が提案されている。

また、特開平11−169117号には、水溶性多糖類を配合してなる揚げ物衣用バッター、及びこのバッターを衣とする揚げ物が提案されている。そして、水溶性多糖類として、水溶性ヘミセルロース、ペクチン、アラビアガム等が用いられる旨の記載がある。

更に、特開平5−7470号には、水溶性食物繊維を含有することを特徴とするバッターミックスが提案されており、水溶性食物繊維として、グァーガム、タラガム、ローカストビーンガムの各分解物が例示されている。

更にまた、特開平8−332033号には、具をバッター液で被覆した後、パン粉、クラッカー粉、米粉、コーングリッツから選ばれた少なくとも1種を付着させる衣付着工程と、フライ油中で加熱処理するフライ工程とからなるフライ類の製造方法において、油脂を20〜60重量%含むバッター液を用いることを特徴とするフライ類の製造方法が提案されている。

【発明が解決しようとする課題】
しかしながら、上記従来の技術は、いずれもバッターの原料に特徴があり、バッターと、ブレダー用ミックス粉との両方について、最適な組合せを考慮するという点で、十分な検討がなされていなかった。

そして、具材にバッターを付着させ、更にブレダー用ミックス粉を付着させて油ちょうし、冷凍する揚げ物製品においては、上記従来技術では、未だ十分に満足できる食感の揚げ物を得ることができなかった。

したがって、本発明の目的は、バッターと、ブレダー用ミックス粉との両方について最適な組合せのものを選択することにより、冷凍した揚げ物を電子レンジや自然解凍などの手段で解凍しても、衣のサクサク感が損なわれないようにした冷凍揚げ物の製造方法を提供することにある。

【課題を解決するための手段】
上記目的を達成するため、本発明による冷凍揚げ物の製造方法は、沃素価が95以下の食用油脂を2.5〜25質量%、大豆蛋白質を1.5〜15質量%、有機酸モノグリセリド及び/又はショ糖脂肪酸エステルを0.1〜1.5質量%、α化度が70%以上の穀粉及び/又は澱粉を1.5〜15質量%含むバッター用ミックス粉に水を加えてバッターを調整し、このバッターを具材に付着させ、次いで水不溶性多糖類を0.2〜2質量%、水溶性多糖類を0.05〜1.5質量%含むブレダー用ミックス粉を付着させた後、油ちょうし、冷凍することを特徴とする。

本発明においては、上記特定配合のバッターと、ブレダー用ミックス粉とを組合せることにより、ボリューム感があり、ゴツゴツした外観を有すると共に、サクサクした良好な食感の衣を有する揚げ物を製造することができる。この揚げ物は、冷凍した状態で保存され、再油ちょう、電子レンジ解凍、あるいは自然解凍して食されるが、揚げたてに近いサクサクとした良好な食感を維持できる。

また、本発明においては、前記有機酸モノグリセリドとして、クエン酸モノグリセリド、コハク酸モノグリセリド、ジアセチル酒石酸モノグリセリドから選ばれる1種又は2種以上を使用することが好ましい。乳化剤として上記有機酸モノグリセリドを使用することにより、衣のサクサク感を増大させ、冷凍保存による食感の劣化をより軽減することができる。

また、前記ブレダー用ミックス粉として、更に熱処理小麦粉を2.5〜7.5質量%含有するものを使用することが好ましい。熱処理小麦粉を用いることにより、衣のサクサク感を更に増大させることができる。

また、前記水不溶性多糖類として、セルロース、大豆繊維、結晶セルロースから選ばれた1種又は2種以上を使用することが好ましい。

更に、前記水溶性多糖類として、グァーガム、キサンタンガム、タマリンドガム、サイリウムシードガム、ジェランガム、カラギーナン、カードラン、アルギン酸プロピレングリコールエステルから選ばれた1種又は2種以上を使用することが好ましい。

これらの水不溶性多糖類及び水溶性多糖類を併用することにより、ブレダー用ミックス粉の具材への付着性を良好にして作業安定性をよくし、油ちょう後の衣のサクサク感を増大させると共に、冷凍保存による食感の劣化をより軽減することができる。

更に、前記バッターを前記具材に付着させた後、前記ブレダー用ミックス粉の付着を2回以上行うことが好ましい。これによれば、ボリューム感があってゴツゴツとした外観の衣を形成しやすくなる。

更に、前記具材に、大豆粉及び/又は大豆蛋白質と化工澱粉とを含む打粉を予め付着させた後、前記バッターを付着させることが好ましい。これによれば、衣と具材との付着性を良好にすることができる。

更にまた、前記ブレダー用ミックス粉として、粒径8〜32μmの粉の含有率が35積算体積%以上で且つ蛋白質含有率が8.0質量%以上である小麦粉を70質量%以上含むものを使用することが好ましい。これによれば、具材への付着性を良好に、ボリューム感を増大させることができる。

【発明の実施の形態】
まず、本発明で使用するバッターミックスについて説明すると、沃素価が95以下の食用油脂としては、例えばオリーブ油、オリーブ核油、カカオ脂、パーム油、パーム核油、ヤシ油、牛脂、豚脂等のもともと沃素価が95以下である油脂を用いることができる他、菜種油、大豆油、ひまわり油、綿実油、落花生油、米油、トウモロコシ油、サフラワー油、ゴマ油等の沃素価が比較的高い油脂であっても水素添加して沃素価を95以下として用いることもできる。

本発明で使用するバッターミックス中における上記沃素価が95以下の食用油脂の配合量は、2.5〜25質量%とされる。上記食用油脂の配合量が2.5質量%未満であるとサクサク感のある衣とならず、冷凍による食感の劣化も著しいものとなり、25質量%超であると衣の吸油量が多くなり油っぽい衣となってしまう。なお、バッター用ミックス粉中における全食用油脂含量としては2.5〜25質量%が好ましい。

大豆蛋白質としては、例えば全脂大豆粉、脱脂大豆粉、大豆分離蛋白など、各種の大豆蛋白製品が使用できる。バッター用ミックス粉中における大豆蛋白質の配合量は1.5〜15質量%とされる。上記配合量が1.5質量%未満の場合、あるいは15質量%を超える場合は、いずれも衣の食感が硬くなる。

本発明で使用するバッターミックス中には、乳化剤として、有機酸モノグリセリド及び/又はショ糖脂肪酸エステルを添加する。有機酸モノグリセリドとしては、乳酸モノグリセリド、クエン酸モノグリセリド、コハク酸モノグリセリド、ジアセチル酒石酸モノグリセリド等が挙げられる。これらの中でも、酢酸モノグリセリド、クエン酸モノグリセリド、コハク酸モノグリセリド及びジアセチル酒石酸モノグリセリドからなる群から選ばれる1種又は2種以上が好ましい。

本発明のバッターミックス中における有機酸モノグリセリド及び/又はショ糖脂肪酸エステルの配合量は0.1〜1.5質量%とされる。これらの乳化剤の配合量が0.1質量%未満であると衣の食感がサクみに欠けたべたついたものとなりやすく、1.5質量%超であると乳化剤特有の異味を感じたり、吸油量が多くなりやすい。

α化度が70%以上の穀粉及び/又は澱粉としては、例えば、とうもろこし、米、小麦、大麦、ライ麦等の粉又は粗粒などの穀粉をα化処理して得られたものや、コーンスターチ、ワキシースターチ、馬鈴薯澱粉、小麦澱粉、タピオカ澱粉、サゴ澱粉、米澱粉等の未化工澱粉、それらを原料としたエーテル化澱粉、エステル化澱粉、架橋澱粉、酸分解澱粉、酸化澱粉及びこれらの化工を組み合わせた化工澱粉をα化処理したものが挙げられる。α化処理の方法としては、特に限定されないが、エクストルーダ、ドラムドライヤー、パドル処理(湿熱処理)、膨化乾燥(パフ化)などの公知の方法が採用できる。

本発明のバッターミックスにおける上記α化度が70%以上の穀粉及び/又は澱粉の配合量は1.5〜15質量%が好ましい。上記配合量が1.5質量%未満では、衣の食感改善効果が乏しく、15質量%を超えると、粘度が低下してバッターが不安定になりやすい。

本発明のバッターミックス中には、上記各成分の他に、食品用膨脹剤、α化していない未化工澱粉、エーテル化澱粉、エステル化澱粉、架橋澱粉、酸分解澱粉、酸化澱粉及びこれらの化工を組み合わせた化工澱粉、デキストリン、大豆油、菜種油等の食用油脂、強力系、準強力系、中力系、薄力系の小麦粉、小麦セモリナ、米粉、コーンフラワーなどの穀粉類、えんどう蛋白質、小麦グルテン、卵粉末、脱脂粉乳等の大豆蛋白質以外の蛋白素材、山芋粉、寒天粉末、コラーゲン、コンニャク粉末、食物繊維、増粘多糖類、他の乳化剤、塩、砂糖、ぶどう糖、糖アルコールなどの糖類、調味料、卵殻粉末、貝殻粉末、骨粉末、ビタミン類、ミネラル類等を適宜含むことができる。

本発明のバッターミックスを用いたバッターは、上記各成分を含むバッターミックス100質量部に対して水100〜500質量部を加えることにより、好ましく調製される。また、バッター調製時に液体油脂又は固形油脂を液状にしたもの、或いは全卵、卵白、卵黄などの卵類、更には醤油、酒、動物や植物から得られたエキス類などの液体調味料を加えてバッターを調製してもよい。

なお、具材に上記バッターを付着させる前に、具材に、大豆粉及び/又は大豆蛋白質と化工澱粉とを含む打粉を予め付着させた後、前記バッターを付着させることが好ましい。

次に、本発明で用いるブレダー用ミックス粉について説明すると、水不溶性多糖類としては、例えばセルロース、キチン、大豆繊維、小麦繊維、コーンファイバから選ばれた1種又は2種以上が好ましく用いられるが、コストが安く、色調に影響を与えない点から、特にセルロースが好ましい。

また、水溶性多糖類としては、グアーガム、キサンタンガム、タマリンドガム、サイリウムシードガム、ジェランガム、プルラン、アラビアガム、小麦ふすまより抽出した水溶性ヘミセルロースから選ばれた1種又は2種以上が好ましく用いられるが、特にグアーガム、キサンタンガム、タマリンドガムが好ましい。

ブレダー用ミックス粉としては、水不溶性多糖類と水溶性多糖類とを併用することが重要であり、どちらの多糖類が欠けても揚げ物の衣の食感改善効果が乏しくなる。

すなわち、ブレダー用ミックス粉中、上記水不溶性多糖類の含量は0.2〜2質量%、上記水溶性多糖類の含量は0.05〜1.5質量%とされる。水不溶性多糖類の含量が0.2質量%未満では衣の食感改善効果が乏しく、2質量%を超えると衣の食感が硬くなる。また、水溶性多糖類の含量が0.05質量%未満では、食感の改善効果が乏しく、1.5質量%を超えると、ベタ付いて作業性が悪くなる。なお、水不溶性多糖類と水溶性多糖類との質量比は、水不溶性多糖類/水溶性多糖類=1/20〜20/1となるように配合することが好ましく、1/15〜10/1となるように配合することがより好ましい。

更に、本発明においては、上記ブレダー用ミックス粉中に、粒径8〜32μmの粉の含有率が35積算体積%以上で且つ蛋白質含有率が8.0質量%以上である小麦粉を70質量%以上含むものを使用することが好ましい。

本発明で用いるブレダー用ミックス粉中には、上記の他に、コーンフラワー、米粉などの穀粉類や、コーンスターチ、ワキシースターチ、馬鈴薯澱粉、小麦澱粉、タピオカ澱粉等の澱粉類や、酸処理澱粉、酸化澱粉、架橋澱粉、エーテル化澱粉、エステル化澱粉、油脂加工澱粉、α化澱粉、β化澱粉などの化工澱粉や、大豆粉、大豆蛋白、卵粉末等の蛋白素材や、大豆油、菜種油、オリーブ油、パーム油などの植物油脂ならびにヘット、ラードなどの動物油脂およびこれらの油脂を使用したショートニング、粉末油脂などの加工油脂等の油脂類や、大豆レシチン、シュガーエステル、脂肪酸エステルなどの乳化剤や、膨脹剤、粉末醤油、蛋白加水分解物などの調味料、香辛料、香料、着色料、ビタミン類、ミネラル類を添加してもよい。

本発明において、具材としては、特に限定されないが、例えば肉類、魚介類、野菜類など、揚げ物の具材として一般的に使用されている全てのものが使用可能である。

次に、本発明の揚げ物の製造方法の好ましい態様を説明すると、上記のような具材に、大豆粉及び/又は大豆蛋白質と化工澱粉とを含む打粉を予め付着させた後、前記バッターミックス100質量部に対して水100〜500質量部を加えて調製したバッターを付着させる。バッターの付着は、具材をバッター中に浸漬して引き上げたり、具材にバッターを振り掛けたりして行うことができる。

こうして具材にバッターを付着させた後、前記ブレダー用ミックス粉を振り掛けてまぶしたり、バッターを付着させた具材をブレダー用ミックス粉中に混合したりして、ブレダー用ミックス粉を、バッターを介して具材の全周に均一に付着させる。この場合、具材を1回以上ひっくり返してブレダー用ミックス粉を振り掛けてまぶす作業を2回以上行うことにより、具材の全周にブレダー用ミックス粉を工業的に生産性よく均一に付着させることができる。

次に、バッター及びブレダー用ミックス粉を付着させた具材を、好ましくは165〜185℃の油中に、通常2〜8分浸漬して、油ちょうを行う。こうして得られた油ちょう済み揚げ物は、常温放置のまま長時間経過しないうちに、好ましくは−25℃以下の急速冷凍機にて冷凍して、好ましくは−15〜−25℃で冷凍保存する。

この油ちょう済みの冷凍揚げ物は、食べる前に再油ちょうしたり、電子レンジやオーブンで加熱解凍したり、あるいは自然解凍させて食べることができ、その際に衣のサクサク感が損なわれず、良好な食感が得られる。したがって、この油ちょう済みの冷凍揚げ物は、例えば外食産業の店舗において、客の注文に応じて再油ちょう又は電子レンジ解凍などして販売するのに適している。

以下、実施例を挙げて本発明を更に具体的に説明する。

試験例1(鶏の唐揚げ)
下記表1に記載の配合組成から成る試料No.1〜9のバッター用ミックス粉100gにそれぞれ水250gを加え、バッター液が滑らかな状態になるまで攪拌してバッター液を調整した。

鶏ムネ肉60gに上記で得られた各バッター液を付着させた後に、下記表2に記載の配合組成からなる各試料に共通のブレダー用ミックス粉をまぶし、1分間175℃の油で油ちょうし、その後−30℃の急速冷凍庫中に40分間入れて凍結させた。その後−24℃の冷凍庫にて4週間放置してから、175℃の油で8分間油ちょうして鶏の唐揚げを得た。

この唐揚を油ちょう直後と、室温(24℃)にて90分間放置後に食したときの食感について、下記の評価基準により20名のパネラーにて点数評価し、平均を求めた。この結果を表1に併せて記載した。

表1の結果から、本発明で規定する組成のバッター用ミックス粉を用いた試料No.1、4、7、8は、いずれも良好な食感を有しているのに対し、食用油脂の添加量が本発明で規定する範囲でない試料No.2、3と、α化度の高い穀粉及び/又は澱粉を含まない試料No.5と、本発明で規定する乳化剤を含まない試料No.6、9においては、食感が劣ることがわかる。

試験例2(カレイの唐揚げ)
下記表3記載の各試料に共通のバッター用ミックス粉100gに水320gを加え、バッター液が滑らかな状態になるまで攪拌してバッター液を調製した。カレイの切り身45gに上記バッター液を付着させた。

その後、下記表4に記載の配合組成から成る試料No.10〜18のブレダー用ミックス粉をまぶし、175℃の油で4分間油ちょうしてから−30℃の急速冷凍庫中に40分間入れて凍結させた。その後−24℃の冷凍庫にて3週間放置した。

下記表5記載の各試料に共通のバッター用ミックス粉100gに水280gを加え、バッター液が滑らかな状態になるまで攪拌してバッターを調製した。豚のロース肉25gに、上記で得られたバッター液を付着させた。

その後、下記表6に記載の配合組成から成る試料No.19〜24のブレダー用ミックス粉をまぶし、175℃の油で5分間油ちょうしてから−30℃の急速冷凍庫中に40分間入れて凍結させた。その後−24℃の冷凍庫にて3週間放置した。

こうして得られた豚の油ちょう済み冷凍フライを取出して、オーブンにて再加熱して、それぞれの食感について試験例1と同様な評価基準により20名のパネラーにて点数評価し、平均を求めた。その結果を表6に併せて記載した。

下記表7記載のバッター用ミックス粉100gに水250gを加え、滑らかな状態になるまで攪拌して得られたバッター液を調製した。イカの短冊15gに上記バッター液を付着させ、その後、下記表8記載のブレダー用ミックス粉をまぶした。

この際、ブレダーを1回だけまぶしたもの(ブレディング1回したもの、試料No.25)、ブレダーをまぶしてから一旦取り出し、反転させて再びブレダーをまぶしたもの(ブレディング2回したもの、試料No.26)、上記のようにブレダーを2回まぶしてから再度取り出し反転させて、更にブレダーをまぶしたもの(ブレディング3回したもの、試料No.27)を作った。

これらを175℃の油で30秒間油ちょうして−30℃の急速冷凍庫中に40分間入れて凍結させた。その後−24℃の冷凍庫にて2週間放置した。これを取出して175℃の油で4分間再油ちょうして得られたイカのフライについて、その外観を下記の評価基準により、また、食感を前記試験例1と同様な評価基準により、20名のパネラーにてそれぞれ点数評価し、平均を求めた。この結果を下記表9に示す。

油切れが非常に良く、非常にボリューム感がありモコモコした凸凹感が極めて良好なものを5点とし、逆に油切れが非常に悪く、ボリューム感に欠け平坦でのっぺりしているものを1点とした。

試験例5(白身魚のフライ)
下記表10記載の各試料に共通のバッター用ミックス粉100gに水190gを加えバッター液が滑らかな状態になるまで攪拌してバッター液を調製した。得られたバッター液を白身魚(メルサーサ)の切り身50gに付着させた。

その後、表11に記載の配合組成から成る試料No.28〜32のブレダー用ミックス粉をまぶし、175℃の油で1分間油ちょうしてから、−30℃の急速冷凍庫中に40分間入れて凍結させた。その後−24℃の冷凍庫にて5週間放置した。なお、表11中の小麦粉A,B,C,Dは、下記表12に示した蛋白質含量及び8−32μmの積算体積比率を有するものである。

これを取出して175℃の油で4分間油ちょうして白身魚のフライを得た。このフライを70℃の保温庫にて45分間放置した後、食感に関して前記試験例1と同様な評価基準により、20名のパネラーにて点数評価し、平均を求めた。その結果を表11に併せて示した。なお、試料No.32はバッター液を付着させる前に大豆粉、大豆蛋白質、化工澱粉からなる打粉を予め具材に付着させた。

表11の結果から、蛋白質含量が比較的高い、8−32μmの積算体積比率が高い小麦粉を用いる方が、良好な食感が得られることがわかる。

試験例6(チキンナゲット)
下記表13記載の配合組成から成る試料No.33〜36のバッター用ミックス粉100gに水210gを加えバッター液が滑らかな状態になるまで攪拌してバッター液を調製した。鶏ひき肉18gを高さ6mmの円柱状に成形し、上記で得られたバッター液をそれぞれ付着させた。

その後、下記表14記載の各試料に共通のブレダー用ミックス粉をまぶし、175℃の油で1分間油ちょうしてから−30℃の急速冷凍庫中に40分間入れて凍結させた。その後−24℃の冷凍庫にて7週間放置した。

これを取出して175℃の油で5分間油ちょうしてチキンナゲットを得た。このチキンナゲットを室温(25℃)にて60分間放置した後、食感に関して試験例1と同様な評価基準により、20名のパネラーにて点数評価し平均を求めた。その結果を表13に併せて示した。
