[冷凍ミンチ肉加工食品(ハンバーグ)の製造]
(製造例1)
表3に示した配合にて、以下の方法により冷凍ハンバーグを製造した。
[1]牛挽肉42g、豚挽肉18g、食塩0.6gを卓上縦型ミキサー(ホバートミキサーN50:ホバート社製)のミキサーボウルに計量し、285rpmで2分間混合した。
[2]たまねぎソテー、パン粉、全卵を加え、139rpmで2分間混合した。
[3]ゲル状水中油型乳化油脂組成物10gを塊のまま加えて139rpmで1分間混合した。混合することで、ゲル状水中油型乳化油脂組成物を生地中に粒子状態で分散させ、ハンバーグの生地を製造した。
[4]ハンバーグの生地を80gの円形に成型し、230℃のオーブンにて8分間加熱(一次加熱)した。
[5]急速冷凍機を用いて凍結し、-20℃で7日間冷凍保管した。冷凍されたハンバーグを500Wの電子レンジで2分間加熱(二次加熱)して、評価に用いた。
また、製造例2~18も表3の配合に従い同様に製造した。なお実施例8、実施例9、比較例6はゲル状水中油型乳化油脂組成物中の食塩量が製造例1に用いた実施例1と異なるため、ハンバーグ製造時に配合するゲル状水中乳化油脂組成物と添加する食塩量を表3に示すように調整して、ハンバーグ中に含まれる食塩量が標準配合、すべての製造例で同一になるように製造した。特に比較例6においては、ゲル状水中油型乳化油脂組成物中に食塩を含まないため、ハンバーグ中の食塩はハンバーグ製造時に食塩として直接添加したものである。
評価項目は、「焼成歩留」、「塩味(官能評価)」とし、評価結果は、表1~表2に示した。
[Manufacture of frozen minced meat processed food (hamburger steak)]
(Manufacturing example 1)
Frozen hamburger steaks were produced using the formulation shown in Table 3 by the following method.
[1] 42 g of ground beef, 18 g of ground pork, and 0.6 g of salt were weighed into the mixer bowl of a tabletop vertical mixer (Hobart Mixer N50: manufactured by Hobart) and mixed at 285 rpm for 2 minutes.
[2] Add sauteed onions, bread crumbs, and whole eggs, and mix at 139 rpm for 2 minutes.
[3] 10 g of gel-like oil-in-water emulsified fat composition was added as a lump and mixed for 1 minute at 139 rpm. By mixing, the gel-like oil-in-water emulsified fat composition was dispersed in the dough in the form of particles, and a hamburger steak dough was produced.
[4] Hamburg steak dough was formed into a circular shape of 80 g and heated in an oven at 230° C. for 8 minutes (primary heating).
[5] It was frozen using a quick freezer and stored frozen at -20°C for 7 days. A frozen hamburger steak was heated in a 500W microwave oven for 2 minutes (secondary heating) and used for evaluation.
Further, Production Examples 2 to 18 were similarly produced according to the formulations in Table 3. Note that in Example 8, Example 9, and Comparative Example 6, the amount of salt in the gelled oil-in-water emulsified fat composition is different from that in Example 1 used in Production Example 1, so the gelled oil-in-water emulsified fat composition added at the time of hamburger production is different. The composition and the amount of salt to be added were adjusted as shown in Table 3, so that the amount of salt contained in the hamburger steak was the same in all production examples using the standard formulation. In particular, in Comparative Example 6, the gelatinous oil-in-water emulsified oil composition did not contain salt, so the salt in the hamburger steak was directly added as salt during the production of the hamburger steak.
The evaluation items were "baking yield" and "salty taste (sensory evaluation)", and the evaluation results are shown in Tables 1 and 2.

<二次加熱後の焼成歩留の評価>
二次加熱したハンバーグの重量を測定し、焼成前の生地重量で除して、焼成歩留を計算した。歩留が高い方が、添加したゲル状水中油型乳化油脂組成物の焼成時のドリップが少ないことを示す。焼成時のドリップが少ない方が、ゲル状水中油型乳化油脂組成物中の食塩のドリップも少なくなり、本発明の効果が高く得られる。
8枚測定した平均値にて以下の通り焼成歩留を評価した。

二次加熱したハンバーグ(喫食時の品温40~60℃)を試食し、塩味について、8名のパネラーで、以下の評価基準で官能評価した。パネラー8名の平均値により、総合評価した。

「標準配合品より塩味が濃い」:4点、
「標準配合品と塩味が同等」:3点、
「標準配合品より塩味が薄い」:2点、

表2に示すように、油脂を含有しない場合(比較例1(製造例13))または10℃におけるSFCが10%以下の油脂を使用した場合(比較例2(製造例14))、ゲルが硬すぎるためにハンバーグ生地に細かく分散せず、焼成中にゲルの脱落が生じて歩留が低下した結果、効果が低かった。ゲル化剤を配合しない場合は、ゲル状ではなく液状であるため、ハンバーグ生地を練る際に乳化物がミンチ肉やパン粉に取り込まれてしまい、塩味が劣る結果となった(比較例3(製造例15))。グルコマンナンを使用した場合では、喫食時の塩味のリリースが悪いために効果が低かった(比較例4(製造例16))。ゼラチンを使用した場合では、耐熱性が低く、ゲルが加熱中に溶けて食塩を含む液がドリップしたため、効果が低かった(比較例5(製造例17))。ゲル状水中油型乳化油脂組成物に食塩を含有させず、ハンバーグに直接添加した場合では、塩味が薄かった(比較例6(製造例18))。 As shown in Table 2, the gel is Because it was too hard, it was not finely dispersed in the hamburger steak dough, and the gel fell off during baking, resulting in a decrease in yield and low effectiveness. [3]ゲル状水中油型乳化油脂組成物10gを塊のまま加えて139rpmで1分間混合した。混合することで、ゲル状水中油型乳化油脂組成物を生地中に粒子状態で分散させ、ハンバーグの生地を製造した。
[4]ハンバーグの生地を80gの円形に成型し、230℃のオーブンにて8分間加熱(一次加熱)した。

以下の成分(A)~(C)を含む、ミンチ肉加工食品用または植物原料含有代替肉加工食品用のゲル状水中油型乳化油脂組成物。
(A)10℃における固体脂含量(SFC)が10%以上である食用油脂
(B)寒天、脱アシル型ジェランガムより選ばれる1種類以上のゲル化剤
(C)食塩
