Abstract
Description
i)マメ科植物の種子の前処理と、
ii)マメ科植物の種子の構成成分の、デンプン画分、パルプ画分、グロブリン型タンパク質画分、及び可溶性画分という4つの画分への湿式分離と、
iii)先の工程ii)で分離されたパルプ画分と可溶性画分との混合と、
iv)工程iii)で得られた混合物の乾燥と、を含む。
固形分含有量は、当業者に公知の任意の方法によって測定される。好ましくは、「乾燥」方法を使用する。それは、既知の重量の試料の既知の量を加熱することによって蒸発した水の量を測定することで構成される。
最初に試料を秤量して、質量m1をグラム単位で測定する。
水が完全に蒸発して試料の質量が安定化するまで、試料を加熱チャンバ内に置いて水を蒸発させる。好ましくは、温度は、大気圧で105℃である。
最終試料を秤量して、質量m2をグラム単位で測定する。

リジン含有量の分析。
着色の外観は、従来技術による小麦ベースの製品の方が大きかったことと、
リジンの損失は、本発明による製品では最終的に33重量%のみであり、一方、従来技術の小麦ベースの製品における損失は50重量%であったことと、
この結果は着色の進行に関する以前の結果とは反対であったことと、が認められた。当業者によれば、本発明による製品におけるリジンのより大きな分解が予想されていた。
Claims (13)
- マメ科植物由来の可溶性画分とマメ科植物由来のパルプとの混合に由来する製品であって、その固形分含有量が、85重量%より大きく、好ましくは90重量%より大きく、更により好ましくは94重量%より大きいことを特徴とする、製品。
- 前記マメ科植物が好ましくはソラマメ及びエンドウマメからなるリストから選択されることを特徴とする、請求項1に記載の製品。
- 前記製品の構成成分の90%が50ミクロン~3000ミクロン、好ましくは300ミクロン~1000ミクロンの大きさであることを特徴とする、請求項1又は2に記載の製品。
- L*a*b*法によるその色空間色度において、その成分Lが30より大きく、好ましくは40より大きく、更により好ましくは50より大きいことを特徴とする、請求項1~3のいずれか一項に記載の製品。
- その成分aが20未満、好ましくは10未満であり、その成分bが25より大きく、好ましくは30より大きく、好ましくは40より大きく、とりわけ50より大きいことを特徴とする、請求項4に記載の製品。
- そのリジン含有量が、その総タンパク質含有量の3重量%~10重量%、好ましくは5%~8%であることを特徴とする、請求項1~5のいずれか一項に記載の製品。
- 単胃動物における有機物質の総消化率が75%より大きいことを特徴とする、請求項1~6のいずれか一項に記載の製品。
- 請求項1~7のいずれか一項に記載の製品の製造方法であって、以下の工程:
i)マメ科植物の種子の前処理と、
ii)前記マメ科植物の種子の構成成分の、デンプン画分、パルプ画分、グロブリン型タンパク質画分、及び可溶性画分という4つの画分への湿式分離と
iii)先の工程ii)で分離された前記パルプ画分と前記可溶性画分との混合と、
iv)工程iii)で得られた前記混合物の乾燥と、を含む、製造方法。 - 前記可溶性画分の前記パルプ画分に対する比率が、固形分含有量で表して、0.8/1.2~1.2/0.8であり、好ましくは1/1であることを特徴とする、請求項8に記載の製品の製造方法。
- 前記可溶性画分を、30重量%~50重量%、好ましくは50重量%の固形分まで予め濃縮した後、前記パルプ画分と混合することを特徴とする、請求項8又は9に記載の製品の製造方法。
- 前記パルプ画分と前記可溶性画分との前記混合を高性能ミキサー内で、5分未満の滞留時間で行うことを特徴とする、請求項8~10に記載の製品の製造方法。
- 好ましくは蒸発ミストを再循環させながら、リングドライヤー技術により乾燥を行うことを特徴とする、請求項8~11に記載の製品の製造方法。
- ヒトが摂取する食品、動物用飼料、医薬品、又は化粧品などの産業用途における、請求項1~5のいずれか一項に記載の製品の産業的使用。
