Abstract
Description
The present invention relates to a twin-pack sauce in which a strong aroma is felt when mixed with pasta or cooked rice.
In recent years, due to the diversification of working styles, the number of double-income households is increasing, and simple cooking is attracting attention. For example, Dispen Pak (registered trademark) is known as an aid to simple cooking (Patent Document 1). It consists of an upper lid and a container, and the contents can be easily squeezed out with one hand by folding the container in two around the protrusions and grooves on the upper lid, so it does not stain your hands and can be used as a food container. , Currently widely used.
Further, it is also known that a container can be separated into two and contain different sauces, and two sauces can be squeezed out at the same time by bending the container (Patent Document 2).
However, the viscosities of these two sources were often similar, and it was difficult to find a large difference in viscosity.
Therefore, an object of the present invention is to provide a twin-pack sauce that gives a strong aroma when mixed with pasta or cooked rice.
The present inventors have conducted extensive research to achieve the above object.
As a result, in the container-filled sauce to be mixed with the food immediately before eating, the two types of sauces A and B are filled in the separated spaces, and the container is the two types of sauces A and B. The discharge port of A can be opened at the same time, the ratio of the content of the source of A and the content of the source of A and the content of the source of B is within a specific range, and the source of A is garlic. , Basil, wasabi, ginger, shiso, lemon, yuzu, and sudachi, including at least one flavoring ingredient, the content of the flavoring ingredient, the viscosity of the sauce of A, and the difference in viscosity between A and B. However, surprisingly, by using a twin-pack sauce in a specific range, it was found that a twin-pack sauce with a strong fragrance can be obtained when mixed with pasta or rice, and the present invention is completed. It came to.

[Test Example 1]
First, in Test Example 1, it was an object to examine the influence of the viscosities of the sauce A and the sauce B on the quality of the twin pack sauce.
Specifically, in Examples 2 to 6 and Comparative Examples 1 to 2, the viscosities of the source A and the source B were changed by increasing or decreasing the blending amount of the thickener so as to be as shown in Table 2. A twin pack sauce was prepared in the same manner as in Example 1. The amount of increase / decrease in the amount of the thickener was adjusted with fresh water.
For each of the twin pack sauces of Examples 2 to 6 and Comparative Examples 1 and 2 obtained, the content ratio of the edible oil and fat of B to 100 parts of the edible oil and fat of the source of A was 20 parts, and the content of the edible oil and fat of B was 20 parts. The pH was 5.0 to 7.5 in each case.
Next, the sources of each twin pack obtained in Examples 2 to 6 and Comparative Examples 1 and 2 were evaluated according to the following evaluation conditions and evaluation criteria. The results are shown in Table 2.
