(考察)
コーン油中には、リノール酸やリノレン酸、オレイン酸などが多く含まれるため、酸化されやすく、ミックストコフェロールやセレノネイン含有製剤を添加しない場合(油脂A)は過酸化物価が大きく上昇した。
また、従来知られている抗酸化剤であるミックストコフェロールを添加しても、十分な酸化抑制効果は示さなかった(油脂B)。
一方、カルコゲン含有製剤は、エタノールに溶解させた後添加することにより過酸化物価の上昇を抑えた(油脂C)。またその効果はカルコゲン含有製剤の添加量を増やすことで、より顕著に発揮された(油脂D)。
さらに、カルコゲン含有製剤は単独で添加するよりも、ミックストコフェロールと共に添加したほうが、その効果を高く発揮した(油脂E,油脂F)。
また、カルコゲン含有製剤を油脂に直接添加した場合よりも(油脂G)、エタノールに溶解して油脂に添加した場合(油脂F)のほうが、その効果を高く発揮することが明らかとなった。

Furthermore, the effect of the chalcogen-containing preparation was higher when it was added together with mixed tocopherol than when it was added alone (fat E, fat F).
Further, it was clarified that the effect is more exerted when the chalcogen-containing preparation is dissolved in ethanol and added to the fat (fat F) than when it is directly added to the fat (fat G).

魚油中には、DHAやEPAなどの多価不飽和脂肪酸が多く含まれるため、酸化されやすく、従来知られている抗酸化剤であるトコフェロールを含有していても、十分な酸化抑制効果は示さなかった(油脂H)。更に、油脂Hに、抗酸化剤として知られている茶抽出物、ローズマリー抽出物、アスタキサンチンを含有させることで、酸化抑制効果が奏されるが(油脂I〜K)、カルコゲン含有製剤を含有させた場合は、更に顕著な酸化抑制効果が奏されることが明らかとなった(油脂L)。

以上の実施例と比較例の結果から、次のことが分かる。
・本発明のカルコゲン含有化合物を含有する油脂は酸化劣化が抑制される。
・本発明のカルコゲン含有化合物とオクタノール分配係数が0.05以上の極性溶媒とを混合後、その混合物を油脂と混合することにより、酸化抑制効果が向上する。
・トコフェロールのみでは酸化抑制効果が何も添加しないものと同等であるが、本発明のカルコゲン含有化合物とトコフェロールを組み合わせたことにより、相乗効果が発現され、本発明のカルコゲン含有化合物単独よりも酸化抑制効果が更に向上する。
