前記被加熱物を載置する載置手段と、
前記加熱室内に供給する蒸気を発生する蒸気発生手段と、
前記加熱室内の空気や蒸気あるいは収納された被加熱物を加熱する加熱手段と、
使用者による操作部からの操作入力信号または前記加熱室の空間あるいは被加熱物の温度を検知する検知手段の検知信号に基づいて前記蒸気発生手段と前記加熱手段を制御する制御手段を備え、
前記制御手段は被加熱物を焼き加熱調理する工程を有し、
前記焼き加熱調理工程は、加熱初期段階に前記蒸気発生手段を制御して前記被加熱物を蒸し状態にさらす工程と、加熱後期に前記加熱手段を制御して前記被加熱物を焼成・乾燥する工程とを含み、
前記蒸し状態にさらす工程は、前記加熱室内に供給された蒸気が前記被加熱物の表面で凝縮し、その凝縮水に前記被加熱物に含まれていた塩分や脂肪を溶出させるために、前記操作部からの入力信号に基づく所定の加熱時間が経過するか、あるいは前記検知信号に基づき前記被加熱物が所定温度に到達したことを検知することで蒸し状態にさらす工程を終了させる
