<P>PROBLEM TO BE SOLVED: To provide a tomato package sustaining freshness of a tomato owing to MA (modified atmosphere) effect and having preventing effect on mold which easily grows when seal-packaging a tomato. <P>SOLUTION: This tomato package comprises packaging a tomato with a plastic film. The package has oxygen concentration of 4-18%, carbon dioxide concentration of 3-17% and relative humidity of ≥60% but <100%. The package has an intervening object between the tomato with a calyx put downward and the plastic film. 本発明はトマトの鮮度を保持すると共に、カビの発生を防止する包装体に関するものである。

【従来の技術】
青果物の鮮度保持資材に包装体内を大気中よりも低酸素、高二酸化炭素濃度条件に保つことで青果物の呼吸を抑制し鮮度を維持するMA(Modified Atmosphere)包装がある。
トマトは収穫後に老化(暗赤色化、軟化など)しやすく商品性が直ぐに失われるためMA包装による鮮度保持が検討されている。しかし、MA包装は、密閉系であるため包装体内が多湿状態となり、カビが発生しやすくなってしまうため、老化を防止できても実用化が困難であった。

【発明が解決しようとする課題】
本発明の目的は、MA効果によってトマトの鮮度が保持でき、かつトマトを密封包装すると発生しやすくなるカビを防止する効果を有するトマトの包装体を提供することである。

【課題を解決するための手段】
すなわち本発明は、トマトを合成樹脂フィルムで包装した包装体において、包装体内の酸素濃度が4〜18%、二酸化炭素濃度が3〜17%、かつ相対湿度が60%以上、100%未満であり、へた側を下向きに置いたトマトと該合成樹脂フィルムの間に介在物を有し、該介在物が開口面積1mm以上の貫通穴を1個以上有し、厚さ1〜20mm、介在物の重量(g)/介在物の空隙部分を含めた体積(CC)が0.0015〜0.6であり、トマトのへたの下部に該介在物の開口部が位置しているトマトの包装体である。
また、トマトを合成樹脂フィルムで包装した包装体において、包装体内の酸素濃度が4〜18%、二酸化炭素濃度が3〜17%、かつ相対湿度が60%以上、100%未満であり、へた側を下向きに置いたトマトと該合成樹脂フィルムの間に介在物を有し、該介在物が、厚さ1〜20mm、比重0.0015〜0.6であり、トマトのへたと接する部分の少なくとも一部に窪みを有するトマトの包装体である。

更に好ましい形態としては、介在物のトマト1個あたりの貫通穴開口面積の合計が、7〜20,000mmであり、貫通穴を有する介在物が、合成樹脂製スポンジ、発泡ポリスチレン、発泡ポリプロピレン、発泡ポリエチレン製ネット、不織布、糸瓜、紙、綿のいずれか1つ、あるいはこれらを組み合わせたものであるトマトの包装体である。
また、介在物の水蒸気透過量が、300g/m・day・atm(at40℃・90%RH)以上であり、合成樹脂フィルムの酸素透過速度及び二酸化炭素透過速度が、それぞれ15,000〜60,000cc/m・day・atm、水蒸気透過量が50〜300g/m・day・atm(at40℃・90%RH)であり、合成樹脂フィルムの酸素透過速度及び二酸化炭素透過速度が、それぞれ15,000cc/m・day/atm未満であり、該合成樹脂フィルムが開孔面積7.1×10−8以下の微細孔を1個以上または表面に貫通あるいは未貫通の傷、クラックや長さ5mm以下の切り込みを有する合成樹脂フィルムであり、合成樹脂フィルムが、延伸・無延伸ポリアミド、ポリスチレン、ポリメチルペンテン、ポリブタジエン、ポリカーボネート、ポリ塩化ビニル、延伸ビニロン、エチレン−酢酸ビニル共重合体、エチレン−ビニルアルコール共重合体の中から選ばれるいずれか1種以上であり、合成樹脂フィルムが、ポリエチレン製、あるいはポリ塩化ビニル製ストレッチフィルムのいずれかであり、介在物がトレイまたはフルーツキャップとしての機能を有しており、介在物が、銀、銅、亜鉛(ゼオライト、シリカゲル、ケイ酸塩、リン酸ジルコニウム、リン酸カルシウムなどのリン酸塩類、溶解性ガラス、活性炭に担持させたものを含む)、酸化チタン、キチン、キトサン、ポリフェノール、竹または果実の種からの抽出物の内1種以上の抗菌効果を有する物質を含む、あるいは該介在物の表面に該抗菌効果を有する物質が塗布されている包装袋である。

【発明の実施の形態】
本発明の目的である、MA包装によってトマトの鮮度を保持しつつ、カビの発生を抑制するには、包装体内の酸素濃度が4〜18%、二酸化炭素濃度が3〜17%、かつ相対湿度が60%以上、100%未満であることを見出した。更に、好ましくは、相対湿度が60%以上、85%以下である。
包装体内の酸素濃度が4%未満であれば、トマトに呼吸障害が起こりやすく傷みやすくなるという問題があり、18%を越えるとトマトの呼吸を十分に抑制できないので鮮度保持効果が小さくなるという問題がある。二酸化炭素濃度が3%未満であればトマトの呼吸を十分に抑制できないので鮮度保持効果が小さくなるという問題があり、17%を越えるとトマトに呼吸障害が起こりやすく傷みやすくなるという問題がある。
相対湿度が60%未満であれば、トマトの萎凋が急激に進行するという問題があり、相対湿度が100%であると、結露が生じて自由水が多くなり、カビが繁殖する。
なお、本相対湿度は平衡状態になっているときの相対湿度を言う。急激な温度変化などで短期的に相対湿度が範囲外になる場合があるが、12時間以内に所定の相対湿度の範囲に戻れば差し支えない。

包装体に用いる合成樹脂フィルムの酸素透過速度及び二酸化炭素透過速度は、それぞれ15,000〜60000cc/m・day・atmが好ましい。酸素透過速度が15,000cc/m・day・atm未満の場合包装体内の酸素濃度が低くなりすぎてトマトが嫌気呼吸を行いエタノールやアセトアルデヒドを生じ傷みやすくなる可能性があり、60000cc/m・day・atmを越えると包装体内の酸素濃度が高くなりすぎてトマトの呼吸が十分に抑制できず鮮度保持効果が得られない可能性がある。二酸化炭素透過速度が15,000cc/m・day・atm未満の場合包装体内の二酸化炭素濃度が高くなりすぎてトマトに炭酸ガス障害が発生しトマトが傷みやすくなる可能性があり、60000cc/m・day・atmを越えると包装体内の二酸化炭素濃度が低くなりすぎるため炭酸ガスによる変色防止などの効果が得られない可能性がある。

また、合成樹脂フィルムの酸素透過速度及び二酸化炭素透過速度15,000cc/m・day・atm未満の場合、合成樹脂フィルムに開口面積7.1×10−8以下の微細孔、貫通・未貫通の傷、クラックや長さ5mm以下の切り込みのうちいずれか1種以上を1個以上設けても良い。微細孔の開口面積が7.1×10−8より大きかったり、切り込みの長さが5mmを超えるとフローの影響が大きくなり包装体1個当たりの酸素と二酸化炭素の透過速度のコントロールが難しくなる。

合成樹脂フィルムの水蒸気透過量は、50〜300g/m・day・atm(at40℃・90%RH)が好ましい。包装体に用いる合成樹脂フィルムの水蒸気透過量が50g/m・day・atm(at40℃・90%RH)未満では包装体内の相対湿度が100%になって結露が生じカビが繁殖する可能性があり、逆に300g/m・day・atm(at40℃・90%RH)を超えると、包装体内の相対湿度が60%以下になることがありトマトの萎れが非常に進みやすくなる可能性がある。

包装体に用いる合成樹脂フィルムとしては、例えば、ポリスチレン、ポリメチルペンテン、ポリブタジエン、ポリカーボネート、延伸ポリアミド、無延伸ポリアミド、ポリ塩化ビニル、延伸ビニロン、エチレン−酢酸ビニル共重合体、エチレン−ビニルアルコール共重合体のうちいずれかの単層フィルムあるいはこれらをラミネートしたもの、さらにはポリエチレン製、あるいはポリ塩化ビニル製ストレッチフィルムを用いることができる。

包装体表面積の平均水蒸気透過量が50〜300g/m・day・atm(at40℃・90%RH)であれば、例えば、片面がポリスチレンとエチレン−酢酸ビニル共重合体のラミネートフィルムで片側がポリプロピレンとポリエチレンのラミネートフィルムの平袋など部分的に延伸あるいは未延伸ポリプロピレンフィルム、ポリエチレンフィルム、ポリエチレンテレフタレートフィルムなどを用いても良い。また、これらのフィルムの厚さはコストの点から10〜60μmのものが好ましい。さらにはこれらのフィルム表面にシーラント層を設けたものでも、防曇処理したフィルムであってもなんら差し支えない。

本発明では、カビを防止するために、へた側を下向きに置いたトマトと包装体である合成樹脂フィルムの間に介在物を有する。介在物は、厚さ1〜20mmであり、介在物の重さ(g)/介在物の空隙部分を含む体積(cc)は0.0015〜0.6である。介在物の厚さが1〜20mmであるのは、厚さが1mm未満では、物体を介在させても合成樹脂フィルムとトマトが密着しすぎてへた周辺部の結露を防止できず、厚さが20mm以上では必要以上にかさ張ることとコストが高くなるためである。介在物の重さ(g)/介在物の空隙部分を含む体積(cc)が0.0015未満であれば、トマトを載せて持ち運んだ際にトマトを傷つけないような素材では、介在物がつぶれて厚みを維持できないという問題があり、0.6を越えると介在物の重量が重くなり取り扱いにくくなったり、素材が硬くなる場合が多くトマトを物理的に傷つけるという問題がある。

介在物には、開口面積1mm以上の貫通穴を1個以上有し、トマトのへたの下部に開口部が位置するようにトマトと介在物を配する。その一例を図1に示す。また、貫通穴を有する介在物にトマトを配し、合成樹脂フィルムで包装した例を図2に示す。
開口面積が1mm未満であればゴミなどで穴が塞がれて通気性が損なわれやすく、容易に加工することもできないという問題がある。

トマトは安定性が良いためへた側を下向きにして輸送販売されることが多い。この場合何らかの対策を講じることなくトマトを置くとへた周辺部が部分的に多湿状態となり結露が生じて、へたにカビが発生しやすくなる。トマト1個あたりの開口面積は、7〜20,000mmとなることがより好ましい。トマト1個あたりの開口面積が7mm未満では通気性が不足し結露を防止できない可能性があり、20,000mmを越えると穴が大きすぎてトマトのへた部分が直接合成樹脂フィルムに接触して介在物が用を足さなくなる可能性がある。貫通穴は開口面積の条件を満たしていれば1個でも複数個でもかまわず、穴の形は円形、三角形、四角形、星型などどんな形状でも差し支えない。

また、介在物が、厚さ1〜20mm、介在物の重量(g)/介在物の空隙部分を含む体積(CC)が0.0015〜0.6であり、トマトのへた側を下に置いた場合、トマトのへたと接する部分の一部あるいは全部に窪みを有する介在物を用いても良い。窪みの一例を図3に示す。
介在物として厚さ1〜20mm、比重0.0015〜0.6のものを使用するのは前述のとおりである。

トマトのへたと接する部分の一部に窪みを有する介在物の場合、介在物の水蒸気透過量は、300g/m・day・atm(at40℃・90%RH)より大きいことが好ましい。介在物の水蒸気透過量が300g/m・day・atm(at40℃・90%RH)未満であると、トマトと接した部分が多湿となりカビが発生する可能性がある。
また、介在物として、介在物に穴をあける他、フルーツキャップのようにネット状のものでも開口面積の条件を満たしていれば良い。

本発明の介在物の材質としては、上記条件を満たしトマトを傷つける恐れが無いものであればどんなものでも差し支えない。好ましくは、取り扱いやすさ、輸送中など衝撃からトマトを守るために段ボール、厚紙、発泡ポリスチレンのように保形性を有するか、合成樹脂(ポリエステル、ウレタン樹脂など)製スポンジ、発泡ポリプロピレン、発泡ポリエチレン、不織布、糸瓜、和紙、綿などクッション性を有するもの、さらにはこれらを組み合わせたもので良い。 窪みを有する介在物の例としては、例えば、発泡ポリウレタン、不織布、紙、綿、糸瓜などをあげることが出来る。
また、例えば、量販店で肉の販売用に用いられている発泡スチロールトレイ、段ボール紙や厚紙をコの字型にしたトレイ、紙や樹脂を果実の形に成型したトレイなどのトレイやフルーツキャップとしての機能を有するトレイでも良い。トレイの例を図4に示す。

更に好ましくは、介在物に、抗菌効果を有する物質を含ませることによって、カビの発生をより抑制できる。介在物に、抗菌効果を有する物質を含ませる方法は、介在物の材質に予め混合しても良く、または介在物の表面に抗菌効果を有する物質を塗布しても良い。
抗菌効果を有する物質としては、例えば、銀、銅、亜鉛(ゼオライト、シリカゲル、ケイ酸塩、リン酸ジルコニウム、リン酸カルシウムなどのリン酸塩類、溶解性ガラス、活性炭に担持させたものを含む)、酸化チタン、キチン、キトサン、ポリフェノール、竹または果実の種抽出物などである。

本発明の密封方法としては、ヒートシール、超音波シール、輪ゴム、カシメ(金属製、ポリカーボネートなど合成樹脂製)、クリップ、ジッパーなどどんな方法でも良い。

また、段ボール箱に本発明の包装袋を一体化させたMA段ボール箱としても使用でき、近年使用量が増加している通い箱の内袋としても使用できる。

【実施例】
《実施例1》
厚さ25μmの延伸6ナイロンフィルム(ユニチカ(株)製エンブレム)(透湿性150g/m・24hr:JISK7129 40℃ 90%RH)からなり、開孔面積約1.96×10−9の孔を10個有する、サイズ150×270mmの袋に100×230mm、厚さ約7mm、重さ2g(介在物の重量/介在物の空隙部を含む体積=0.0124)、トマトを置く部分2ヶ所の中心に1個の一辺が3.5cmの正方形の穴をそれぞれ開けたポリウレタンフォームを敷き、その穴の箇所に着色度80%のトマト(品種:桃太郎)をそれぞれ1個ずつ計2個(約340g)を、へたを下向きに入れて袋の開口部をヒートシールで密封した後20℃で保管した。この時4日目における袋内の酸素濃度は8.6〜9.4%、二酸化炭素濃度は11.5〜12.2%、相対湿度は84〜86%RHであり、トマトは、鮮やかな赤色と果肉の硬さを維持しており、へたもきれいな状態でカビの発生、傷もなく品質良好であった。
ただし、包装作業や持ち運びは若干やり辛かった。なお、評価はn数=5であり、以下同様の個数で評価した。
《実施例2》
厚さ25μmの延伸6ナイロンフィルム(ユニチカ(株)製エンブレム)(透湿性150g/m・24hr:JISK7129 40℃ 90%RH)からなり、開孔面積約1.96×10−9の孔を10個有する、サイズ150×270mmの袋に、100×230mm、厚さ約7mm、重さ15g(介在物の重量/介在物の空隙部を含む体積=0.0932)、トマトを置く部分2ヶ所の中心付近に直径5mmの穴を各3個(合計6個)開けた66ナイロン製不織布を敷き、その穴の上に着色度80%のトマト(品種:桃太郎)をそれぞれ1個ずつ計2個(約340g)を、へたを下向きに入れて、袋の開口部をヒートシールで密封した後20℃で保管した。この時4日目における袋内の酸素濃度は8.8〜10.1%、二酸化炭素濃度11.0〜12.2%、相対湿度84〜86%であり、トマトは鮮やかな赤色と果肉の硬さを維持しており、へたもきれいな状態でカビの発生、傷もなく品質良好であった。ただし、包装作業や持ち運び作業は若干やり辛かった。

厚さ35μmの延伸6ナイロンフィルム(ユニチカ(株)製エンブレム)とエチレン−酢酸ビニル共重合体のラミネートフィルム(透湿性100g/m・24hr:JISK7129 40℃ 90%RH)からなり、開孔面積約2.16×10−9の孔を12個有するサイズ130×250mmの袋に、トマトを置く部分2ヶ所にそれぞれ直径35mmの円形の穴1個を開けたサイズ115×220mm、高さ15mm(発泡ポリスチレンの厚さ約3mm)、重さ2.6g(介在物の重量/介在物の空隙部を含む体積=0.0606)の発泡ポリスチレントレイの上にトマト(品種:桃太郎)2個(約340g)を入れて袋の開口部を金属かしめで密封した後20℃で4日間保管した。4日目における袋内酸素濃度は8.8〜10.1%、二酸化炭素濃度は11.3〜12.6%、相対湿度89〜93%RHであり、トマトは、鮮やかな赤色と果肉の硬さを維持しており、へたもきれいな状態でカビの発生、傷もなく品質良好であった。さらに、包装作業、持ち運びも容易であった。
《実施例4》
ポリウレタンフォームの代わりにゼオライトに担持させた銀を約1wt%混入したポリウレタンフォームを用いた以外は請求項1と同様にトマトを包装した後20℃で保管した。4日目における袋内の酸素濃度は8.5〜9.4%、二酸化炭素濃度は11.4〜12.1%、相対湿度は84〜86%RHであり、トマトは、鮮やかな赤色と果肉の硬さを維持しており、へたもきれいな状態でカビの発生、傷もなく品質良好であった。
《実施例5》
厚さ約5mm、トマトを置く部分2ケ所の中心に孔径3.5cmの円形の穴をそれぞれ1個あけた155×220段ボールを底面が115×220mmとなるようにコの字型に折り曲げてトレイ状にした(重さ10g)(介在物(底面)の重量/介在物(底面)の空隙部を含む体積=0.0587)。その上に着色度80%のトマト(品種:桃太郎)2個(約340g)を、へたを下向きに置き。開孔面積約1.96×10−9の孔を5個有する厚さ15μmのポリ塩化ビニル製ストレッチフィルム(透湿性140g/m・24hr:JISK7129 40℃ 90%RH)でラップ掛けして密封した後20℃で保管した。このとき4日目における袋内の酸素濃度は7.6〜8.4%、二酸化炭素濃度は8.9〜9.2%、相対湿度は85〜88%RHであり、トマトは、鮮やかな赤色と果肉の硬さを維持しており、へたもきれいな状態でカビの発生、傷もなく品質良好であった。さらに、包装作業、持ち運びも容易であった。

ポリウレタンフォームを使用しない以外は実施例1と同様にトマトを密封し20℃で保管した。このとき4日目における袋内酸素濃度は8.5〜9.5%、二酸化炭素濃度は11.5〜12.3%、相対湿度は84〜86%RHであり、トマトのへた周辺に結露が生じへた部に白色のカビが発生していた。また、へた部周辺に若干あたりによる傷が生じていた。
《比較例2》
穴をあけていないポリウレタンフォームを用いた以外、は実施例1と同様にトマトを密封し20℃で保管した。このとき4日目における袋内酸素濃度は8.6〜9.6%、二酸化炭素濃度は11.2〜12.0%、相対湿度は84〜86%RHであり、トマトのへた周辺に結露が生じへた部に白色のカビが発生していた。ただし、物理的な傷は観察されなかった。
《比較例3》
孔を開けていない延伸ナイロンフィルムを用いた以外は、実施例1と同様にトマトを密封し20℃で保管した。このとき4日目における袋内酸素濃度は0.1〜1.2%、二酸化炭素濃度は20.5〜27.9%、相対湿度は100%RHであり、トマトは裂果しているものがあり果汁が染み出し、へた部に白色のカビが発生していた。また、開封時酸素不足が原因と思われる異臭がした。ただし、物理的な傷は観察されなかった。
《比較例4》
実施例1において、延伸ナイロンフィルムに開孔面積約1.96×10−9の孔を10個開けた代わりに直径5mmの穴8個を開けた以外は、実施例1と同様にトマトを密封し20℃で保管した。このとき4日目における袋内酸素濃度は21%、二酸化炭素濃度は0.0%、相対湿度は44〜46%RHであり、トマトはカビの発生は観察されなかったものの老化して暗赤色となり、果肉の軟化も進んでおり商品性を失っていた。ただし、物理的な傷は観察されなかった。

延伸ナイロンフィルムの代わりに開孔面積約1.96×10−9の孔を9個有する厚さ25μmの防曇加工を施した延伸ポリプロピレンフィルム(透湿性5g/m2・24hr:JISK7129 40℃ 90%RH)を用いた以外は実施例1と同様にトマトを密封し20℃で保管した。このとき4日目における袋内酸素濃度は8.3〜9.2%、二酸化炭素濃度は11.1〜11.4%、相対湿度は100%RHであり、トマトは鮮やかな赤色と果肉の硬さを維持していたが、へた周辺を含む包装体内に結露が生じ、へたに白色のカビが発生していた。ただし、物理的な傷は観察されなかった。
《比較例6》
実施例3において、穴を開けていないサイズ115×220mm、高さ15mm、厚さ約3mm、重さ2.6gの発泡ポリスチレントレイを用いた以外は実施例3と同様にトマトを20℃で保管した。4日目における袋内酸素濃度は8.9〜10.0%、二酸化炭素濃度は11.1〜12.9%、相対湿度89〜93%RHであり、トマトは鮮やかな赤色と果肉の硬さを維持していたが、へた周辺に結露が生じ白色のカビが発生していた。ただし、物理的な傷は観察されなかった。
《比較例7》
厚さ約0.7mm、重さ1.5g、トマトを置く部分の中心2ヶ所付近に直径5mmの穴を各3個(合計6個)あけた115×220mmの66ナイロン製不織布(介在物(底面)の重量/介在物(底面)の空隙部を含む体積=0.0847)を敷いた以外は実施例2と同様にトマトを密封し20℃で保管した。このとき4日目における袋内酸素濃度は8.9〜10.1%、二酸化炭素濃度11.2〜12.5%、相対湿度84〜86%で、トマトは鮮やかな赤色と果肉の硬さを維持していたが、へた周辺部に結露が生じ、白色のカビも発生した。また、へた部周辺に若干あたりによる傷が生じていた。
《比較例8》
