Abstract

Η παρούσα εφεύρεση συνίσταται στη διαδοχική χρήσηγηγενών στελεχών ζυμομυκήτων, απομονωμένων από την παραδοσιακά οινοποιητική περιοχή της Ζίτσας Ιωαννίνων (Ηπειρος), ως καλλιέργειες εκκίνησης (πρώτη)και ενίσχυσης (η δεύτερη), με σκοπό τη βετλίωση του αρώματος και της γεύσης του παραγόμενου οίνου.Τα χρησιμοποιούμενα στελέχη έχουν απομονωθεί από την ερευνητική μας ομάδα, ταυτοποιηθεί με τη χρήση βιοχημικών και μοριακών τεχνικών και έχουν ταξινομηθεί ως M. pulcherrima, var. zitsae (στέλεχος ΖΥ6) και S. cerevisiae, var.zitsae και ακολούθως προστλιθεται το στέλεχος Z622, S. cerevisiae, var. zitsae όταν η αιθανόλη φτάσει σε επίπεδα της τάξης 4-6%v/v. με αυτό τον τρόπο η ελεγχόμενη οινοποίηση αποκτά αυθεντικότερο χαρακτήρα αυθόρμητης ζύμωσης, δεδομένου ότι αξιοποιούνται γηγενή οινοποιητικά στελέχη και παράγεται οίνος ανωτέρας ποιότητας, με έντονο αρωματικό δυναμικό και συγκεκριμένο τοπικό-παραδοσιακό χαρακτήρα.
