Abstract

An instant pudding composition comprises edible starch e.g pre-cooked or pre-gelatinized starch, an edible bicarbonate such as sodium or potassium bicarbonate, and glucono delt lactone and, if desired, dry milk powder, a sweetening agent such as sugar, saccharine or calcium cyclamate, and a flavouring such as cocoa (chocolate), vanilla and salt. The composition may contain 15 to 70% of edible starch, 0.5 to 5% of an edible bicarbonate and 0.5 to 5% of glucono delt Lactone, the percentages being by weight. A composition containing powdered milk may be made into a pudding by shaking 1 part, by weight, of it with 2 to 6 parts of cold water. A composition which does not contain powdered milk may be shaken with cold milk.
