Abstract
769,456. Blanching peas. INTERNATIONAL MACHINERY CORPORATION SOC. ANON. Sept. 7, 1954 [July 19, 1954J, No. 25875/54. Class 49 In blanching peas and like vegetables by immersion in a liquid of fixed temperature, the vegetables are not allowed to come into contact with the walls of the containing vessel or with the atmosphere, the liquid being kept circulating through the vessel, through an external conduit and into the vessel again by steam jet or other propulsion means in the conduit. The apparatus of Figs. 1, 2 and 3 includes blanching vessel 1, an Archimedean screw 5 fitting closely in the base of the vessel and forming, between blades 4 of the screw, compartments for water and peas, and an outer tube 9 in which water is heated and is conveyed in the direction of arrow F from an outlet 12 and the end 10 of the vessel to an inlet 13 at the end 11 by means of a venturi device 14 and a tube 16 discharging steam thereinto. The apparatus includes also a wheel 8 and a shoot 7 for withdrawal from the blanching vessel of peas introduced at 6, this wheel being provided with perforations 19 for allowing water to pass to the outlet 12 and buckets 18 for lifting the peas to the shoot 7. The apparatus may include a pipe 23 for supplying supplementary hot water by tubes 22 into the tube 9 and thence by tubes 21 to the compartments formed by the screw blades 4.
