Abstract

In artificially sweetening canned fruits, e.g. sliced yellow cling peaches, Bartlett pear halves, prune plums, fruit cocktail, apricots, dark sweet cherries, there are employed saccharin in amount from 0.004 to 0.020 per cent by weight of the total fill of the can and sorbitol in amount from 50 to 400 times the saccharin content. The liquid portion of the canned fruits may be thickened by carboxymethylcellulose in the proportion of 0.1 per cent by weight of the total fill of the can.
