Abstract

Fish and like foodstuffs are preserved by immersing in a cold isotonic liquid which is maintained at a temperature very slightly below that at which the fish &c. becomes rigid, the fish &c. being maintained at a temperature just above that at which it becomes rigid. The temperature of the liquid may be -1 to -3 DEG C., the fish being stored after the treatment at -10 DEG C., dehydration and oxidation being prevented by surrounding it with a thin layer of ice by repeatedly watering it or dipping it in water or by storing it in tanks or boxes which are kept filled and hermetically sealed. Where fish is to be preserved for a few weeks only it can be stored at -2 to -3 DEG C., dehydration and oxidation being prevented by keeping it in boxes which are covered with a layer of finely crushed ice or by sealing it within tanks or boxes. The isotonic liquid may be sea water which may have substances added to reduce its freezing point by 1 or 2 DEG C.
