Abstract

In the preparation of artificial milk from soya beans the beans which may be shelled or degerminated, whole or comminuted, are roasted to remove the bitter taste, treated with the alcohol or like organic solvent, the alcohol being removed by vacuum and are then made into an aqueous suspension, the suspension generally being kept at boiling temperature for 10 minutes. Superheated steam, e.g. at 115 DEG C., or a suitably heated indifferent gas or gas mixture, e.g. air or carbon dioxide at 90 DEG C., is then passed through the suspension. Heated air may be used with vacuum distillation. Sodium phosphate and sodium chloride may be added to the water used for making the suspension. Finally the suspension is passed while still warm through a filter press. Residue from the manufacture of oil from the beans by pressing or extraction by solvents may be used as starting material; the treatment with organic solvents may be reduced or omitted in the case of the residues from solvent extraction.ALSO:Artificial milk is prepared from soya beans by extracting impurities by treatment with alcohol or similarly acting organic solvents, next treating the material in a hot aqueous suspension with a steam or gas current to remove further impurities and finally filtering, each treatment being carried out more than once if desired. As described, the beans which may be shelled or degerminated, whole or comminuted, are roasted to remove the bitter taste, treated with the alcohol or like organic solvent, the alcohol being removed by vacuum, and then made into an aqueous suspension, the suspension generally being kept at boiling temperature for 10 minutes. Superheated steam, e.g. at 115 DEG C., or a suitably heated indifferent gas or gas mixture, e.g. air or carbon dioxide at 90 DEG C., is then passed through the suspension. Heated air may be used with vacuum distillation, the water evaporated being replaced if a condensed or dried product is not to be prepared. The boiling may be effected simultaneously with the steam or gas treatment. Sodium phosphate and sodium chloride may be added to the water used for making the suspension. Finally the suspension is passed while still warm through a filter press and sugar or molasses and a vegetable fat having a melting point of about 30 DEG C. are added to the filtrate giving the artificial milk product, the fat being emulsified therein by addition of lecithin or other emulsifying agent. Residue from the manufacture of oil from the beans by pressing or extraction by solvents may be used as starting material; the treatment with organic solvents may be reduced or omitted in the case of the residues from solvent extraction. Aromatising substances artificially prepared or obtained from milk, butter, &c., and carbon dioxide or substances evolving it may be added to the milk. The product may be employed for making dried milk, cheese or like products. The residues obtained in the filtration may be used for manufacture of food products.
