Abstract

2,6,6-Trimethyl-1-cyclohexen-1-yl-acetaldehyde (ss-cyclohomocitral) of the formula (1) <IMAGE> is used as a component of seasoning and/or aromatising agents, for example in a mixture with damascenone, 4-damascol, damascol, a phenyl-C6-ketone or an an adjuvant which is a food flavouring auxiliary, perfuming auxiliary or tobacco seasoning auxiliary. The compound (1) is obtainable by oxidation of ss-ionone with a peralkanoic acid or hydrogen peroxide, in the former case, ss-cyclohomocitral enol acetate, usable in a similar manner to ss-cyclohomocitral, being formed which can be hydrolysed to form ss-cyclohomocitral; in the oxidation with hydrogen peroxide, ss-cyclohomocitral is obtained directly.
