Штамм в лактатной среде при ЗО^'С продуцирует 5 сут до 144 мг/ /1ОО мл углекислого газа, количество про- пионовой кислоты составл ет 246-267мг % при соотношении пропионата к- ацетату 3,2:2,7. Обладает высокой липолитичес- кой активностью - зона гидролиза твина 4О-12 мм [а].Однако включение его в состав зак- васкв молочнокисльк бактерий ограничиваетс комплексами штаммов, не оказывающих антагонистического действи .Вследствие необходимости частой смены молочнокислых культур любой другой комплекс этих микроорганизмов может оказывать антагонистическое воздей—
