При 14-дневном куль-,5 тивировании в цельном молоке образует 5,12-6,0% свободных жирных кислот. Ли- политнческа активность (ширина зс«ы) в среднем 16 мм. Образование СО^^ за 14 суток культивировани 128 мг/1ОО мл, а jl пропвоновой кислоты - 364,61 мг %' [ij.Однако в соответствии с известными гфвнципами подбора культур дл микуобв- опогаческих заквасок при подборе новогокомплекса молочнокислых бактерий этот штамм непригоден, так как он ингибиру- етс молочнокислыми бактери ми. -Наиболее близким к предлагаемому по технической сущности и достигаемому положительному эффекту вл етс штамм PropionibacteriuTn frfiuclanre^ctii'i А-1, используемый дл производства советского сыра. Штамм в лактатной среде при ЗО^'С продуцирует 5 сут до 144 мг/ /1ОО мл углекислого газа, количество про- пионовой кислоты составл ет 246-267мг % при соотношении пропионата к- ацетату 3,2:2,7. Обладает высокой липолитичес- кой активностью - зона гидролиза твина 4О-12 мм [а].Однако включение его в состав зак- васкв молочнокисльк бактерий ограничиваетс комплексами штаммов, не оказывающих антагонистического действи .Вследствие необходимости частой смены молочнокислых культур любой другой комплекс этих микроорганизмов может оказывать антагонистическое воздей— | |
