Abstract

1463422 Enzyme-substrate compositions FOOD CONTROL AB 24 April 1974 [25 April 1973] 17863/74 Heading C1A A composition comprises (i) an inert solid carrier having a specific surface area of at least 50 m<SP>2</SP>/g. and (ii) a layer bound to the carrier by physical adsorption containing an enzymatic substrate of low solubility in water and substantially stable in the absence of the corresponding enzyme. The carrier may include organic/inorganic polymers, inorganic oxides, acids, and salts, especially Al 2 O 3 , CaCO 3 , MgCO 3 , silica aerogel and Ca 3 (PO 4 ) 2 . The enzyme substrates may be tripelargonin, tripropionin, glycerine tricapronate (tricaproin), tripelargonin, tributyrin, bis 3,5,5, trimethyl-hexyladipate, and mixed esters of polyvalent alcohols with organic or inorganic acids. The composition may be used in an enzymatic indicator system, e.g. for the storage of foodstuffs.
