A dry coconut milk powder, which is reconstitutable in water to give a coconut milk with a fresh taste, contains a protein, for example sodium caseinate, lactalbumin, soy protein, or egg protein, in an amount sufficient to provide emulsion stability, and an emulsifier selected from partial esters of glycerol and polyglycerol with a higher fatty acid, that is to say, one having at least six carbon atoms. Dextrin in an amount sufficient to reduce tackness may also be present. The product may be obtained by grinding coconut meat, preferably in the presence of water, filtering to remove coarse solids, adding the other ingredients, and drying, for example, by spray drying, if desired with prior homogenisation.
