Jan. 26, 1916 Butter substitutes.-To preserve the buttery aroma of margarine, an alkali or alkaline-earth salt, other than the alkali lactates, of the lowest members of the oxy-fatty acid ssries is added to the fat or ingredients of the margarine. Mixtures of the above salts, with or without an alkaline lactate, may be used.
