La présente invention concerne le domaine de la boulangerie et plus particulièrement celui de la fabrication de pains de type français destinés à être vendus frais au détail. La fabrication du pain est traditionnellement réalisée à partir de farine mi-blanche panifiable, par exemple celle connue sous la désignation de « type 55 », mélangée à de l'eau pour réaliser une pâte qui est additionnée de sel et de levure de boulangerie ou de levain. Les pains dits « de spécialité » peuvent être préparés à partir de farines d'un autre type, par exemple de type 65. L'objectif de la présente invention est la mise à disposition d'un procédé de panification optimisé utilisant un mélange de levain (également appelé ci-après « pâte-levain ») spécifique qui permet d'obtenir des pains de qualité élevée tout en optimisant le processus de panification, notamment en augmentant sa flexibilité et en diminuant le nombre d'étapes ou de prises en main habituelles par le boulanger. Le pain selon l'invention est également remarquable du fait de sa durée de conservation sensiblement accrue, 2 à 3 fois supérieure à la durée de conservation moyenne de 7h d'une baguette française classique. A cette fin, la présente invention a pour objet un procédé de préparation d'un mélange spécial pâte-levain caractérisé en ce qu'il 25 comprend essentiellement les étapes suivantes consistant à : a) mélanger 1000 g d'un mélange constitué de : - 88 % à 94,5 %, en poids, de farine de blé, - 5 % à 10 %, en poids, de levain de germe de blé dévitalisé déshydraté, et 30 - 0,5 % à 2 %, en poids, de farine de blé malté, la somme des ingrédients totalisant 100 %, avec 2,5 g de levure ordinaire et 500 g d'eau chaude ordinaire à 30 °C sous une agitation modérée de l'ordre de 100 tr/min jusqu'à l'obtention d'un mélange pâteux, -2- b) refroidir le mélange pâteux obtenu à une température comprise entre 1 °C et 3 °C et le laisser reposer à cette température pendant une durée allant de 24 à 72 h. Elle a également pour objet un mélange pâteux pâte-levain 5 obtenu par la mise en oeuvre du procédé précité. La présente invention a ensuite pour objet un procédé de panification caractérisé en ce qu'il comprend essentiellement les étapes suivantes consistant à : a) réaliser un frasage spécifique consistant à mélanger, sous une 10 agitation modérée de l'ordre de 100 tr/min, de la farine, du sel, de la levure et de l'eau avec le mélange pâteux pâte-levain prêt à l'emploi selon l'invention, b) réaliser une opération de pétrissage de la pâte obtenue à l'étape précédente à une vitesse plus élevée que la vitesse précédente, 15 jusqu'à l'obtention d'une pâte homogène et souple, c) peser et subdiviser la pâte en portions que l'on étale de façon homogène dans des bacs, d) laisser reposer la pâte portionnée à température ambiante pendant une durée allant de 30 à 45 minutes, 20 e) refroidir la pâte étalée à une température comprise entre 1 °C et 3 °C et la laisser reposer à cette température pendant une durée allant de 12 à 72 h, f) diviser et façonner la pâte de l'étape précédente sur un support préfariné pour réaliser des pâtons prêts à être cuits, 25 g) enfourner lesdits pâtons et les cuire à une température de sole et de voûte d'environ 240 °C +/- 10 °C pendant une durée allant de 22 à 25 minutes. Enfin, la présente invention a encore pour objet un pain ou produit de boulangerie à base de pâte à pain obtenu par la mise en oeuvre du 30 procédé selon l'invention. L'invention sera mieux comprise, grâce à la description ci-après, qui se rapporte à des modes de réalisation préférés, donnés à titre d'exemples non limitatifs. Conformément à la présente invention, on prévoit un procédé 35 de préparation d'un mélange spécial pâte-levain comprenant essentiellement les étapes suivantes consistant à : a) mélanger 1000 g d'un mélange constitué de : -3- - 88 % à 94,5 %, en poids, de farine de blé, - 5 % à 10 %, en poids, de levain de germe de blé dévitalisé déshydraté, et - 0,5 % à 2 %, en poids, de farine de blé malté, la somme des ingrédients totalisant 100 %, avec 2,5 g de levure ordinaire et 500 g d'eau chaude ordinaire à 30 °C sous une agitation modérée de l'ordre de 100 tr/min jusqu'à l'obtention d'un mélange pâteux (par ex. en mélangeant pendant 5 mn en 1ere vitesse), b) refroidir le mélange pâteux obtenu à une température comprise entre 1 °C et 3 °C et le laisser reposer à cette température pendant une durée allant de 24 à 72 h. Il va de soi que l'homme du métier, le boulanger ordinaire, saura adapter les quantités de matières première en fonction des ses besoin pour sa production et aura à sa disposition, pour toutes les caractéristiques et opérations non décrites plus en détail, ses connaissances générales et son savoir-faire habituel en matière de fabrication du pain. Avantageusement, le procédé précité est caractérisé en ce que la farine de blé est constituée de : - 10 % à 20 %, en poids, de farine de blé de la variété « CAP HORN », - 15 % à 35 %, en poids, de farine de blé de la variété « APACHE », - 45 % à 75 %, en poids, d'une farine d'un mélange de blés 25 connu sous la dénomination « BPMF », la somme des % de variétés totalisant 100 %. La présente invention a également pour objet le mélange pâteux pâte-levain obtenu par la mise en oeuvre du procédé précité qui peut être vendu à part et mis à la disposition des boulangers intéressés, sous réserve 30 naturellement de respecter les conditions et durées de conservation et restrictions en matière d'hygiène usuelles pour un produit alimentaire de ce type. La présente invention a encore pour objet un procédé de panification comprenant essentiellement les étapes suivantes a) - g) 35 consistant à : a) réaliser un frasage spécifique consistant à mélanger, sous une agitation modérée de l'ordre de 100 tr/min, de la farine, du sel, de la levure -4- et de l'eau avec le mélange pâteux pâte-levain prêt à l'emploi selon la présente invention, b) réaliser une opération de pétrissage de la pâte obtenue à l'étape précédente à une vitesse plus élevée que la vitesse précédente, 5 jusqu'à l'obtention d'une pâte homogène et souple, c) peser et subdiviser la pâte en portions que l'on étale de façon homogène dans des bacs (dimensions préférées 600 x 400 mm), d) laisser reposer la pâte portionnée à température ambiante pendant une durée allant de 30 à 45 minutes, 10 e) refroidir la pâte étalée (mise en forme) à une température comprise entre 1 °C et 3 °C et la laisser reposer à cette température pendant une durée allant de 12 à 72 h, f) diviser et façonner la pâte de l'étape précédente sur un support préfariné pour réaliser des pâtons prêts à être cuits, et 15 g) enfourner lesdits pâtons et les cuire à une température de sole et de voûte d'environ 240 °C +/- 10 °C pendant une durée allant de 22 à 25 minutes. Le pétrissage (spiral) peut être réalisé pendant 5 mn en première vitesse puis 6 mn en seconde vitesse pour une température finale 20 de la pâte de 21-22 °C. Après 24 heures de repos, il faut veiller à couvrir les bacs. L'enfournement se fait bien sûr après le traditionnel coup de lame (3 par pain, par exemple). Selon une autre caractéristique, le procédé de panification est 25 encore caractérisé en ce que le mélange de l'étape a) pour former la pâte se fait, pour 1000 g de farine de blé, à raison de : - 20 à 22 g de sel de cuisine, - 10 à 12 g de levure ordinaire, - 150 g de mélange pâteux pâte-levain, 30 - 660 à 670 g d'eau ordinaire. Selon un mode préféré, la farine de blé est constituée de : - 10 % à 20 %, en poids, de farine de blé de la variété « CAP 5 HORN », - 15 % à 35 %, en poids, de farine de blé de la variété « APACHE », et - 45 % à 75 %, en poids, d'une farine d'un mélange de blés connu sous la dénomination « BPMF », 10 la somme des % de variétés totalisant 100 %. Une telle farine permet d'accroître la quantité d'eau retenue dans les mélanges, améliore l'homogénéisation du mélange, facilite les opérations mécaniques, développe la couleur de la croûte, prolonge la conservation des produits en conservant la fraîcheur, améliore le moelleux 25 du produit et la structure de la mie et améliore les qualités nutritionnelles.
