Description

The present invention relates to an assembly consisting of a food package and live shells contained in this package, this package being "microwavable", that is to say that it serves as a container for cooking said shells in a microwave oven.

The purchase of fresh shellfish, that is to say alive, that the consumer or the restorer, cooks and accomodates in his kitchen, is very widespread. However, for many years have been available on the market shellfish, such as molds, packaged under plastic packaging. Thus, packaging containing molds packaged under vacuum is known. Shellfish such as live mussels have also been proposed in food packaging which is "microwavable", which means that it serves as a container for cooking said shellfish in a micro-oven. -ondes. This is particularly convenient because the consumer only has to transfer said packaging in its oven to proceed with cooking. However, especially when it comes to mussels, the consumer enjoys tasting them with a sauce, which is therefore necessary to prepare separately, and to pour on the previously cooked mussels. Another proposal is to accompany the packaging "microwavable" a pod of liquid sauce, separated from the shell. Such presentation requires opening the package and sectioning the pod, to pour the sauce it contains on the shells, before cooking in the microwave. This is hardly practical. To further facilitate the consumer's task, packages of the same type as the previous one have been proposed, a sauce in the liquid state being packaged with the molds.

Thus, by heating in the microwave oven, the mussels are cooked and the sauce is heated, so that the dish is ready to be consumed. Such a presentation, however, has certain disadvantages.

In the first place, when the consumer chooses this product within the radius of a store, he inevitably manipulates the packaging, so that the sauce, initially at the bottom of it, is distributed over all the shells. The packaging being at least partially transparent, the visual appearance of the sauce / shell mixture is not very appetizing. Moreover, because the shells are conditioned alive and maintained in this state under the effect of an adequate atmosphere, they disgorge part of the water they initially contain. This water is diluted in the sauce and the aromas, herbs and other condiments it contains tend to lose in taste quality. The present invention aims to overcome these disadvantages. It therefore relates to a set consisting of a food packaging and live shells contained in this package, this package being "microwaveable", ie it serves as a container for cooking said shells in a micro oven -ondes, characterized in that said packaging contains a fat-based sauce, which is in the solid state at room temperature and liquefies under the effect of cooking. The term "room temperature" means a temperature below 35 ° C. Thus, as the said set is not heated in a microwave oven, the sauce remains in the solid state, so that even in case of excessive handling of the package, the shells retain their initial visual appearance. On the other hand, the water disgorged by the shells does not mix with the sauce and then it is in the solid state. According to other advantageous and nonlimiting features: said sauce is made of butter or is based on butter and / or other fats; - Said sauce contains aromatics and / or condiments; said sauce contains texturizing agents such as gelling agents; - said package is hermetic; said sauce is in the form of at least one "puck"; - said "puck" is positioned in the bottom of the package, under the shells; - said shells consist of mussels and / or other bivalve shells; - It contains a gas or a mixture of gases able to keep said shellfish alive for several days. Other features and advantages of the present invention will appear on reading the description which follows. This will be made with reference to the accompanying drawings in which Figure 1 is a simplified view, in vertical section, of an assembly according to the invention. The assembly 1 shown in the attached figure, comprises a package 1 and live shells. The package 1 consists of a plastic tray and / or plastic and cardboard and / or film-coated cardboard, transparent or opaque. It presents here the shape of a rectangular parallelepiped. However, any other shape is conceivable (like a cylindrical shape). The bottom wall is here referenced 12, while the transverse and longitudinal walls are respectively referenced 10 and 11. These walls 10 and 11 continue at their apex by a sealing strip or peripheral skirt 100, directed at right angles outwards. As will be seen below, it serves as a support for a sealing film 13. If necessary and to improve the rigidity of the package, the bottom 12 may be ribbed. As shown in the appended figure, on the bottom 12 are deposited two "pucks" 2 of a fat-based sauce, which is in the solid state at room temperature and which liquefies under the effect of the cooking.

Of course, the number of shuffles can vary, in particular according to the volume of the package and that of said shuffleboard. By the term "puck" means a mass of solid sauce, thin. This puck has for example a cylindrical shape. However, any other form is conceivable. This sauce is preferably made of butter or is made from butter and / or other fat, and may be associated with texturizing agents such as gelling agents. It contains all the ingredients necessary for the constitution of a sauce such as pepper, salt, small pieces of shallot, onions, garlic, or other aromatic herbs, herbs and condiments, such as spices. To do this, one method among others is to knead a mass of butter with all the necessary ingredients, then to pass the mixture thus obtained in an extruder. The "flange" then obtained is cut, for example automatically, to obtain pallets of identical dimensions. The desired number of pallets is deposited in each of the packages to be filled. This operation can be performed manually or automatically. The same applies to the deposit of shells such as C molds in the package. For example, the package as shown in the attached figure is sized to receive 750 grams of live mussels. Of course, the shells can be deposited first, and then the solid sauce is deposited thereon. A gas or a gaseous mixture capable of keeping the shellfish alive is then injected into each package. This is for example a mixture of oxygen, carbon dioxide and / or nitrous oxide. Immediately thereafter, the packages are closed by depositing a lidding film 13 which adheres to the sealing pad (peripheral skirt 100). The assembly can then be stored for several days, preferably at a positive temperature, below 8 ° C. Thus, after 7 to 10 days, the shells are still alive.

During this time, the palets of solid sauce remain intact, without disintegration, despite the presence of natural exudate shellfish at the bottom of the package. Seen from the outside, the products retain a beautiful appearance, because they can not mix with the sauce. After having pierced the film 13 with a few small holes, the consumer places the packaging in a microwave oven, for cooking in a few minutes, depending on the power of the oven, the weight of the shells and the nature of those (eg 1 mn30 for a portion of 10 750g molds, using an oven that delivers a power of 900 W). During cooking, the sauce melts and mixes with the natural exudate of the shells. Herbs and herbs are released. The cooking generates steam in the package which helps to cook the shellfish very quickly evenly, while maintaining a soft texture. The consumer can then mix the shellfish with the sauce using a canopy, before tasting in or out of the package.
