Description
The subject of the present invention is a new process for the preparation of food products with a controlled shelf life and a system for carrying out the process. By controlled shelf life, the present text is understood to mean that the shelf life of the products treated by the process according to the invention is a function of controlled parameters such as the heat values of the products as well as the pasteurizing or sterilizing values defined normatively to achieve a minimum shelf life of the processed products under defined storage conditions (ambient temperature, refrigeration, freezing, etc.).
In the field of food products, there is a category of so-called intermediate products, which serve as ingredients for the preparation of elaborated products such as, in particular, fresh dairy products (yoghurt for example), ice creams, cheeses, industrial pastries or still cooked dishes. These intermediate products are generally preparations based on fruits and / or vegetables, whole or in pieces, which must retain maximum organoleptic qualities of fresh fruits and vegetables, especially in terms of color, taste and texture. For their use, these intermediate product preparations are subjected to a treatment for their long-term preservation, generally at room temperature.
The technique conventionally used for this treatment consists of batch cooking at a temperature of between 95 and 100 ° C. for 20 to 60 minutes. This technique has the disadvantages of requiring a long heating time, not to ensure a homogeneity of the heating in the tank and to present risks of grating solid particles, that is to say of the burn area of it in contact with the walls of the tank. In addition, because of the problem of homogeneity of heating, the proportion of solid particles in the treated product is technically limited to 55-60%. Finally, there is an alteration of the colors of the products and some loss of organoleptic qualities of those -this.
Patent EP 482322 proposes a process for preparing a long-life food product consisting mainly of a vegetable and / or a fruit and / or a mixture of vegetables and / or fruits whose flavor, color and texture are comparable to those that may present the same vegetables and / or fresh fruits prepared with steam or in boiling water for example. This method comprises a first heat treatment step lasting 1 to 15 minutes at 80-95 ° C., followed after cooling a fermentation step with a lactic acid bacterium for 10 to 3 days to pH 3.1-4.4. and finally a pasteurization step for 2 to 30 minutes at 80-110 ° C. If this process makes it possible to obtain fruit and / or vegetable preparations having the desired organoleptic qualities, it can clearly be seen that its duration is very long and that its implementation can only be done in a discontinuous manner because of the fermentation stage. The present invention therefore aims to obviate the drawbacks of the prior art and to propose a new process for the preparation of food products with a controlled shelf life whose treatment is of short duration and does not degrade the original organoleptic qualities of the products treated. , improving them in comparison with traditional techniques, while at the same time conferring on them a capacity of preservation which complies with the normative requirements and in particular with storage at room temperature for several months. In this respect, the process according to the invention is remarkable in that it comprises successively: a step of conditioning the product consisting in homogenizing the temperature of the product at a temperature of between 25 and 65 ° C .; a step of heat treatment by ohmic heating at 70-121 ° C. followed by a holding for 0.5 to 5 minutes; a cooling step aimed at bringing the temperature of the product to a temperature below 30 ° C. The tests carried out have demonstrated that the taste and visual qualities of the products treated were of a level much higher than those obtained during a traditional thermal treatment in batch cooking. It is understood that the walls in the ohmic heating zone remaining cold, grating phenomena are avoided. In addition, the microbiological stability checks carried out confirmed the effectiveness of the thermal treatment by ohmic heating and its stability over time. It goes without saying that depending on the nature of the thermal treatment (pasteurization or sterilization), the temperature and the duration of the ohmic heating step, and especially the duration of the chambering step, will be adjusted accordingly. Indeed, the chambering step makes it possible to keep the heated product at a predetermined high temperature following its exit from the ohmic heating device, reinforcing the antiseptic effect of the process and making it easier, if necessary, to reach the values. sterilizers (Fo) or pasteurizers (VP) required by the food standards according to the treated products and their destination and the durations of conservation v__sées. It is known that the electrical conductivity of food and food products is usually between 0.001 and 60 Siemens / minute. It was surprisingly found that the process according to the invention makes it possible to treat food products having an electrical conductivity of not less than 10 Smin-Smax values in the conduct of the process, the ratio Smax over Smin. This process therefore advantageously makes it possible to prepare a wide range of products, ranging from the preparation based on pieces of fruit or whole fruit to sauces with vegetable and meat pieces, through preparations of aromatic herbs. In addition, it has also been found that the process was applicable to food products containing a solids content greater than 65%. It is well appreciated that this characteristic makes it possible to provide cut or whole fruit type food preparations consisting of an absolute majority proportion of solid particles of up to 95%. According to an advantageous characteristic of the invention, the steps following the conditioning step are carried out in continuous mode. The process according to the invention therefore makes it possible to treat large volumes of food products, with very short treatment times, less than one hour, and preferably of the order of twenty minutes. The first conditioning stage will have a duration of between 5 and 30 minutes and is intended to ensure, by mixing and heating, an optimal homogeneity of the product, both in terms of temperature and composition, before the heat treatment. According to a variant of the invention, the conditioning step comprises a partial vacuum de-aeration phase. This optional phase advantageously makes it possible to improve the homogeneity of the product and therefore the efficiency of the ohmic heating. The ohmic heating step makes it possible to apply to the product to be treated a fairly high temperature rise (of the order of about fifty degrees Celsius) in a very short time, of the order of one second, at most a few seconds. Preferably, the cooling step aims to bring the temperature of the processed food products to a temperature of 25 ° C. This cooling step is short, less than 5 minutes. Finally, at the end of the heat treatment line, it will be possible to achieve aseptic packaging of the treated products, for example by placing in an aseptic bag manufactured in a synthetic polymeric food material. The tests suggest a shelf life of 18 to 24 months. Another object of the invention is a system for implementing the preceding method.
According to one characteristic of the invention, this system comprises at least one double-jacketed heating mixture tank, connected to a vacuum pump, intended for the conditioning of the products to be treated and a continuous heat treatment line comprising a feed hopper. power supply unit, an ohmic heating assembly, consisting of at least one tubular heating unit fed by at least one electric generator, a tubular lodger, cooling means, an aseptic packaging machine, a pump-6 and a tubular network for ensure the progress of the products to be treated in the line. According to a preferred variant of the invention, the cooling means comprise a double heat exchanger 5 with an internal scraped surface. A pilot plant was constructed in which the mixing tank had a volume of 500L, the mixing being carried out by horizontal stirrers. The transfer between the mixing tank in which the conditioning of the product is carried out and the continuous treatment line can be carried out by any appropriate means such as for example plastic bins meeting food standards. In the continuous heat treatment line of the realized pilot plant, all piping has an internal diameter of 2 inches; the circulation of products is ensured by a reciprocating double piston pump with a capacity of 200 to 1200 kg / h; the ohmic heating assembly consists of two ohmic heating modules each consisting of two tubes with a diameter of 2 inches and 75 cm long, powered by a generator; the line has 4m of insulated chamber tube; the scraped surface cooler exchanger has an exchange area of 1 m 2 and is of the variable speed type.
With these material characteristics, the treatment tests carried out could be carried out at a flow rate of 300 l / h. Of course, one skilled in the art is able to size the implementation system according to the desired processing capacity without departing from the scope of the present invention. Finally, it goes without saying that if the process for preparing a long-life food product according to the invention is particularly applicable to so-called intermediate food products based on fruits and / or vegetables, it is only a question of a particular illustration in no way limiting the fields of application of the invention.
