Abstract

The cooker is generally of cuboid shape with top (3) and bottom (2) surfaces and side walls (4) forming a cooking enclosure (1). One of the walls is formed by a removable box (5) fixed to the outside. The box houses the active components of the cooking and food handling elements, such as the heating elements, the rotisserie drive mechanism and lighting for the interior of the cooking enclosure. These components pass through sealing glands on the wall of the box forming one side of the cooking enclosure. The walls of the box are shaped to provide a close fit with the other sides of the cooking enclosure.

The invention relates to a cooking appliance such as a roasting pan, an oven, a grill, a spit or similar, of generally parallelepipedal shape with a floor wall, a ceiling wall and peripheral walls, the whole delimiting a cooking chamber.

It relates more particularly to professional roasters with two side walls carrying a central pivoting longitudinal axis of swing supports, a transparent and opening front wall, a rear wall, a floor wall and a ceiling wall. Electrical resistors are arranged in the volume formed by said walls and are generally partially surrounded by deflectors reflecting towards the central axis the infrared radiation emitted by said resistors.

Roasters of this type are widespread in the trade where they are used by butchers, poultry, caterers, etc. for the preparation, often public, of a large number of roasted poultry with a high capacity which can go for example up to 24 poultry / hour.

These roasters, for obvious reasons of hygiene, but also for their presentation in operation in public, must be maintained with the highest possible cleanliness. Clogging of the interior of the roasting pan and of the parts it contains (axis, swings, resistances, deflectors) is due to projections and the flow of grease produced during cooking, so that a complete cleaning frequent roasting is essential.

In known roasters, access to the interior of the volume delimited by the walls is generally limited and is only possible after opening the pivoting front wall and even when the accessories are removable, cleaning the roaster remains tedious , long and often imperfect due to the presence of electrical components whose contact with any cleaning fluid must be avoided.

In patent application FR-A-94 04030 of the present applicant, solutions have been proposed to improve access to said cooking enclosure during cleaning.

Thus, in this roasting pan, the front and rear walls and that forming the floor are removable.

In addition, the main elements receiving grease and spillage are removable and can therefore be easily and thoroughly washed in a very short time. However, such disassembly of said elements is still insufficient because the electrical members such as the heating means, the lighting means and the drive means of the motor axis remain inside the cooking chamber. during cleaning. It is therefore necessary for the person responsible for cleaning to be extremely careful that water does not enter these electrical organs. Therefore, the use of a pressurized water jet cannot be envisaged.

The present invention aims to overcome these drawbacks of known cooking appliances by proposing a cooking appliance whose cleaning will be quick, easy and may possibly be carried out by means of a pressurized water jet.

To this end, the subject of the invention is a cooking appliance such as a roasting pan, oven, grill, spit spit or the like, of generally parallelepipedal shape with a floor wall, a ceiling wall and peripheral walls, the whole delimiting a cooking chamber, characterized in that at least one of the walls consists of a removable housing comprising means for fixing to at least one adjacent wall, this housing bearing on its face facing the interior of the 'cooking enclosure all the active parts of the roasting pan, such as heating means, lighting means, to be connected to second electrical and / or mechanical members arranged inside the housing and, on at at least one of its external faces, control members of said second members.

With such a cooking appliance, not only the main elements receiving splashes and grease flows but also all the elements operating with electricity are removable and can therefore be easily washed thoroughly in a very short time as well as the chassis. the cooking chamber which can, in this case, be washed with a jet.

According to a preferred embodiment of the invention, the cooking appliance is a preferably professional roasting pan and the wall consisting of a removable housing is one of the peripheral walls (lateral, front or rear) of the enclosure. In addition, this housing is equipped with a safety device capable of being activated during disassembly of the housing to prevent, during an unauthorized energization, the operation of the members carried by the face of the housing facing the inside the cooking chamber.

Although the invention can be applied to any type of cooking appliance such as a roasting pan, spit, oven or grill, the invention will be described below with reference to a roasting pan.

This roasting pan comprises a cooking enclosure 1 delimited by means of a floor wall 2, a ceiling wall 3 and peripheral walls 4 which are generally four in number in the case of a cooking enclosure of general shape. parallelepiped. These peripheral walls 4 constitute the front wall, the rear wall and the side walls of said cooking enclosure 2. According to the embodiment of said walls, the frame of such a roasting pan can have a large number of shapes. In the example shown in Figure 1, the ceiling wall 3 of the cooking enclosure is fixedly mounted on a frame consisting of uprights and crosspieces which delimit the frame of the peripheral walls of said enclosure. The floor wall 2 is in turn constituted by a plate mounted integral with the frame formed by the uprights and the crosspieces. This plate can however, in certain embodiments, be removed and replaced only by a floor consisting of a plate sliding topped by a removable hanging drip pan so as to make the cooking chamber easily accessible from its bottom. At least one of the peripheral walls, in particular the front wall, may consist of a frame forming a frame and an opening 12. The frame forming a frame is constituted by the uprights and the crosspieces previously described. The opening 12 is generally a transparent glass which can be articulated on the frame by means of hinges or another articulation or else form a door of guillotine type or else come to bear on one of the lower crosspieces of the frame and be kept closed by means of a pivoting closure.

One of the other peripheral walls which, in FIG. 1, is a side wall, consists of a removable casing 5 comprising fixing means 6A or 6B to at least one adjacent wall. Obviously, several embodiments of these fixing means can be envisaged. In the first embodiment shown in Figures 2 and 4, at least one of the faces of said housing 5 and at least one adjacent wall of the roasting pan have one at least one projection 7B, the other at least one cavity 6B which cooperate during assembly / disassembly of said housing to secure the housing 5 to the adjacent walls, in this case the walls 2 and 3. The projections 7B and the cavities 6B are for some provided on the faces above and below of the housing 5 and for the others on the floor 2 and ceiling 3 walls of the roasting pan. Thus, as shown in FIG. 2, the housing 5 provides on its faces above and below the cavities or housings 6B intended to come cap, when fixing the housing 5 to the adjacent walls delimiting the cooking chamber, pins 7B equipping said adjacent walls. As shown in FIG. 4, the adjacent walls fitted with these tenons 7B are the floor wall 2 and the ceiling wall 3. The housing 5 is fixed to these walls 2 and 3 in two stages. Firstly, the cavities 6B on the top face of the housing 5 come to cap the tenons 7B of the ceiling wall 3 then, secondly, by moving the housing 5 downward, the cavities 6B on the face of the below the housing 5 cap the tenons 7B formed on the floor wall 2 of said enclosure. The housing 5 is thus immobilized in position.

In another embodiment shown in Figures 2 and 3, the housing 5 is fixed to the adjacent peripheral walls 4 of the roasting pan by an assembly by pins 6A, the pins 6A being received in notches 7C formed on support arms 7A mounted in cantilever on said adjacent peripheral walls 4 and projecting towards the outside of the cooking enclosure 1. In this case, the housing 5 is fixed to the peripheral walls in a single step. The peripheral walls equipped with its support arms 7A are, in the example shown, the front and rear walls. The pins 6A are in turn formed on the housing 5 in the vicinity of the top face of the latter on each side face of the housing adjoining the face of the housing facing the interior of the cooking chamber.

In addition to these fixing means 6A or 6B, this box 5 carries, on its face facing the inside of the cooking enclosure 1, all of the active members of the roasting pan, such as heating means 8, means lighting 9 and possibly drive means 10 of the motor axis, to be connected to second electrical and / or mechanical members (not shown) disposed inside the housing 5. In a manner known per se, the heating means consist of electrical resistors 8 arranged perpendicular to the face of the housing 5 facing the interior of the cooking chamber 1. The device 10 for driving the motor axis is capable of receiving a support motor axis swings. The lighting means 9 are constituted by special high-temperature oven lamps. The second electrical and / or mechanical members disposed inside the housing 5 can, for example, be constituted by a motor and a power supply. drive intended for the operation of the device 10 for driving the motor axis, by at least one thermostat for adjusting the heating temperature of the electrical resistors 8, by at least one timer for determining the cooking time and by a terminal block ensuring the connection between the different electrical components.

This box 5 further comprises, on one of its external faces, generally one of the faces contiguous to the face facing the inside of the cooking enclosure, a control panel 13 incorporating a certain number of members for controlling said second electrical and / or mechanical members disposed inside the housing 5.

Thus, by way of example, this control panel 13 may include two indicator lights respectively indicating the powering up of said housing 5 and the operation of the electrical resistors 8, a selection switch with several positions so as to be able to choose a lighting position alone or lighting + heating and possibly lighting + heating + motor, one or more thermostat control buttons which regulate the temperature of the high and low resistors and the timer which determines the cooking time.

In addition, display means can be provided, in particular when the roasting pan is of the programmable type and possibly members for controlling a cleaning device such as a steam cleaning device. In addition to this housing 5, the roasting pan comprises in a known manner a removable motor axis (not shown) intended to be housed inside the drive member 10, this motor axis carrying swings capable of containing poultry . This roasting pan can also include walls which are preferably enamelled, removable, which in particular double the face of the housing 5 facing the interior of the cooking chamber 1. This enamelled wall which can be dismantled will also be present on any other fixed full peripheral wall of said cooking enclosure. This removable wall makes it possible to protect from grease splashes the face of the housing 5 facing the inside of the cooking enclosure. Likewise, deflectors which partially surround the electrical resistances and which reflect towards the central axis the infrared radiation emitted by said resistors are also removable in order to facilitate their cleaning. The windows forming opening 12 of the front, rear and possibly lateral walls are also optionally removable. Therefore, when all of these elements are removed, the remaining structure can easily be cleaned.

In general, for cleaning, we will proceed as follows: we will remove from the inside of the roasting pan all the accessories: swings, swings support, deflectors, covering, crumb tray, drip tray, ice creams as well as the box 5 and we can then clean the inside of the roasting pan using any washing device. When the roasting pan is clean, it will then suffice to reattach the casing 5 to the adjacent walls 4 and reassemble all the accessories. The appliance will again be ready for a new cooking without any risk of danger or short-circuiting due to humidity in the electrical circuit.

The box 5 being equipped with an electric cable to allow it to be powered up, it is necessary to equip this box 5 with a safety device capable of being activated during the dismantling of the box 5 to prevent during a setting under unauthorized voltage, the operation of the components carried by the face of the housing facing the interior of the cooking chamber, in particular the operation of the electrical resistances 8. This safety device can be a device of the mechanical and / or electrical type . Thus, for example, there may be provided a push button fitted to the case 5, this push button being capable of being pressed inside said case 5 when the case 5 is fixed to the adjacent walls of the roasting pan, this depression ensuring unlocking by closing the electrical circuit of said housing.

In addition, the housing 5 is equipped with handles 11 to facilitate its handling.

Claims (9)

1. Cooking appliance such as a roasting pan, oven, grill, spit spit or the like, of generally parallelepipedal shape with a floor wall (2), a ceiling wall (3) and peripheral walls (4), the whole delimiting a cooking enclosure (1), characterized in that at least one of the walls consists of a removable housing (5) comprising means for fixing to at least one adjacent wall, this housing (5) bearing on its side facing the inside of the cooking chamber (1) all of the active members of the roasting pan, such as heating means (8), lighting means (9) having to be connected to second electrical and / or mechanical members arranged inside the housing (5) and on one of its external faces, control members of said second members.
2. Cooking appliance according to claim 1, characterized in that it constitutes a roasting pan, the wall of which, consisting of a removable casing (5), is one of the peripheral walls (4), preferably a side wall of the cooking chamber.

Cooking appliance according to claim 1, characterized in that at least one of the faces of said housing (5) and at least one adjacent wall of said appliance have one at least one projection (7B), the other at least one cavity (6B) which cooperate during assembly / disassembly of said housing (5) to secure the housing (5) to the adjacent walls (2, 3).
